It is hot out, so to me that means ice cream and frozen treats! I am not a huge fan of just a plain bowl of ice cream, I love mine loaded up with toppings. That is, unless the ice cream itself is filled with extra yummy goodness 
Even then, I have been known to put a drizzle of hot fudge on top. I don’t have ice cream that often, so I kind have a “go big or go home” attitude about it.

I am happy to report that jury duty yesterday lasted about two hours. I got there to check in at 8:00, and I was home by 10:00. The case that I was going to be considered for was going to be a 2 week fraud trial. Thankfully, it was settled outside of court Sunday evening. The man is now in jail, and will be there for quite a few years. I am really glad I didn’t have to sit through a 2 week trial, but the thought of actually saying someone would have to go to jail is kind of scary. That is a lot of responsibility! I am just hoping it is going to be a long time before I get called again.

This was the first weekend that I have been home in a month. It was so nice not to be traveling, and have some relaxation time. Although we did head to Denver to explore some and meet my brother and SIL for lunch. Today on the other hand, is a stressful day. I was summoned for jury duty, and have to spend the day seeing if I will be selected to sit on a jury. Given I stay home with my 8 year old, this is a hectic thing to have happen. Luckily, I have amazing friends, and a husband with a flexible job. Now let’s just hope I don’t have to come back tomorrow

Shrimp is one of my favorite proteins to cook with. I couldn’t have said that two years ago. Not only did I not really like eating it, but I never knew when it was done. So when I did cook it for my husband, I almost always over cooked it. A lot has changed. Now that I like shrimp, I can tell when it is done. Plus it cooks so quickly, it is great for busy nights.

Summer break is officially here. My son finished his last day of school last Friday. Since then we have been busy. We have gone to the neighborhood pool a couple of times, spent the weekend with friends, and his baseball season is in full swing. Watching 2nd graders pitch in baseball, is pretty darn entertaining! The other night my 8 year old hit the ball every time he was up to bat, which in my opinion is all you can ask for!
