I’m leaving on a jet plane, don’t know when I’ll be back again. Sorry, every time I get on a plane that song gets stuck in my head. I have my dad to thank for that one! I do know when I will be back…Sunday night. I am headed to sunny Florida for Food Blog Forum this weekend. It will be an amazing weekend, and I am so excited it is finally here!

Summer has arrived here in Colorado. We went straight from winter (snow on May 1st) to summer. This week has been in the mid 80′s. Who needs spring, anyway! This last weekend we spent 3 hours pulling weeds, tilling soil, and planting our garden. We went a little crazy this year! We have 2 kinds of green beans, 2 kinds of squash, Brussels Sprouts, 4 tomato plants, asparagus, parsnips, potatoes, sweet corn, strawberries, 3 hot peppers, a bell pepper, 2 kinds of basil, rosemary, thyme, parsley, and cilantro. You can probably expect lots of recipes with veggies later in the summer

My husband and son are big fans of fish. I know how good it is for you, I just haven’t been able to get on board with liking it. Every time my husband orders it out I try his, hoping this will be the time I like it. I finally like shrimp, so it only seems like a matter of time before fish follows, right?

I hope that all of you Mom’s out there had a wonderful Mother’s Day! It was a gorgeous day here in Colorado. We drove up into the mountains and did one of our favorite hikes in Rocky Mountain National Park. They still had lots of snow up there, so we actually got to snowshoe one last time this season. It was a little strange to be in the 70′s and have lots of snow around. It was a great day to spend together as a family.

It is Friday, are you ready for the weekend? Do you have something special planned for Mom on Sunday? I sent my Mom and MIL special gifts in the mail this week. As for our house, I leave that up to the boys. Usually my husband does a great job of doing something special for me on Mother’s Day. Last year we went mini-golfing, he made breakfast and lunch for us, and then we all made homemade pasta for dinner. Personally, I don’t need much. Doing the dishes, and cooking a meal is perfect in my book.

In 8 days I will be on a flight to Orlando for Food Blog Forum, I can’t even tell you how excited I am!! There are so many great people I am looking forward to meeting, and so much I am going to learn. I am sure next Thursday Things with be full of lots of pictures and stories from the trip.

Last week we had our final cooking club of the year 
It was a fun year of planning dishes around a different color each month. To wrap up the year we ended with the rainbow. At first I wasn’t sure if that meant any color of the rainbow, or our dish should be a rainbow of colors. I figured it was the later, so that is what I did. Turns out I was right, that is what everyone did! Complete with over the top rainbow cupcakes and rainbow jello (layered with 8 different colors), it was definitely a colorful and delicious day!

Monday is here, and I am ready to cheer you up with some Nutella! After such a great weekend, I need a little pick me up. We had gorgeous weather. There was double header flag football games, a football team picnic, seeds and plants were put in the garden, and lots of basketball was played (my 8 year got a basketball hoop for his birthday). So today definitely calls for Nutella

My spice cabinet has been a mess since we moved into this house, last July. Every time I opened the cupboard I was annoyed, and spent forever digging for what I needed. We had been talking about how to fix it and make it functional, pretty much since the day we moved in. It was one of those things that just got pushed to the back burner though. I finally got fed up enough, and took matters into my own hands.

I couldn’t give you lots of Mexican recipes for Cinco de Mayo and leave out the margarita, could I?! We have had Baked Chicken Taquitos, Teedo’s Famous Salsa that was perfect for chips or dipping the taquitos. And last, but not least, there was the Cafe Rio Chicken Tostadas. I still can’t get enough of the Cafe Rio chicken, so many different things you could do with that stuff (enchiladas, quesadillas, nachos, taco pizza etc.) See, I think you are ready for one killer party!
