In my quest to eat a little better, I have to come up with some healthy snacks! I work from home, so most of the time my meals and snacks are at home. Which is a pro and a con all at the same time! I know I need to eat more fruit and veggies, so when I saw this quick and easy snack in Cooking Light, I knew I had to try it. Plus, it seemed like a fun way to get my 6 year old to eat fruit after school!

These were super easy to make. And I could see adapting these in lots of fun different ways. I added a few sprinkles to my granola for color and fun, since I was appealing to a 6 year old. Chopped up nuts, other cereals, dried fruit, M&M’s, so many ways you could make these. I even used a little caramel for a few slices, because I had a handful of caramel baking bits in my cupboard. I made these in the middle of the day, so I drizzled a little lemon juice on the apples so they wouldn’t turn brown before my son came home from school. They were a definite hit when he got home, and will be made again!

Adapted from Cooking Light

2 oz. Semi-Sweet Chocolate Chips, melted
1/3 cup Granola
1 large Apple, but into wedges (I used Braeburn)
2 tsp Sprinkles
1 tsp Lemon Juice, optional

Place the granola on small plate, crush lightly.  Mix in the Sprinkles.  Drizzle the lemon juice over the apple wedges if not serving right away.  Dip apple slices into chocolate, and then coat in the granola mixture.  Place skin side down on a plate, and refrigerate for 5 minutes or until chocolate is set.  Serves 4

These are super cute! And healthy! I'm always on the hunt for healthy snack ideas because I am the world's craziest snacker. I'm seriously the worst. I could probably eat a whole bag of Costco-sized wheat thins in one sitting. So yes, these treats will save me into gaining a gazillion pounds so for that, I thank you :)
