Ingredients

  • 1 (20 oz) bag refrigerated hash brown potatoes
  • 1 ½ cheddar cheese, shredded
  • 8 oz Bacon, cooked and crumbled
  • 3 whole large eggs, beaten
  • 1 Tablespoon finely chopped chives
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

    1. Preheat waffle iron as directed.
    2. In a large bowl combine all of the ingredients together. Mix until well blended.
    3. Spray waffle iron with non-stick spray. Pour about 1 cup potato mixture into the waffle iron (will depend on the size of your waffle iron), spread so it covers the whole cooking surface. Press down, and cook for 4-5 minutes.
    4. Remove from waffle iron and serve immediately.
    5. Top with a fried egg for a complete meal. Hot sauce is optional.

Notes

Mix in whatever your favorite breakfast meat and veggies are! Sausage, bell peppers, onions, ham etc are all great mix-ins.
