I was planning lunch with a friend recently, and we were trying to figure out what to make.  She wanted barbecue something, and I was thinking sandwiches or something with good bread. So we combined everything and came up with this Barbecue Chicken Stuffed French Bread.

I think having meal time with friends and family is very important. Connecting at the end of the day with your spouse and kids, just brings everyone together. Having that time with friends connects you with the world around you, and gives you new perspective. But what is meal time if you don’t have delicious food and drinks?

This barbecue chicken stuffed French bread is so easy to make, so you aren’t missing out on those special moments. I used a rotisserie chicken to make this come together in just minutes. With bottled barbecue sauce and shredded cheese, you have a meal the whole family is going to love.

I could drink iced tea by the pitcher, all day every day. It is seriously my favorite drink. When we have family get togethers, it is kind of the joke who will drink more, me or my sister in-law. So serving this barbecue chicken stuffed french bread with Lipton Peach flavored ice tea was the easy choice.

Barbecue Chicken Stuffed French Bread

Barbecue Chicken Stuffed French Bread - French bread stuffed with chicken, barbecue sauce and plenty of cheese!! Crispy and delicious chicken dinner!

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 1 loaf French Bread
  • 3 cups cooked chicken, , chopped
  • 1 (18 oz) bottle Barbecue sauce
  • 1/2 cup red onion, , diced
  • 2 cups cheddar cheese, , shredded
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl mix together chicken, barbecue sauce, onion, and 1 cup of cheddar cheese.
  3. Cut the top off, and remove the center of the loaf of bread. Fill the bread with chicken mixture.
  4. Over and wrap the foil over the bread. Bake for 20 minutes.
  5. Remove from oven and top with the remaining 1 cup of cheese.
  6. Turn on the boiler, and return bread to the oven 5 minutes, or until golden.
  7. Remove from oven, top with fresh cilantro and slice to serve.
