It is hot out, so to me that means ice cream and frozen treats!  I am not a huge fan of just a plain bowl of ice cream, I love mine loaded up with toppings.  That is, unless the ice cream itself is filled with extra yummy goodness :)   Even then, I have been known to put a drizzle of hot fudge on top.  I don’t have ice cream that often, so I kind have a “go big or go home” attitude about it.

Thursday Things

Summer break is officially here.  My son finished his last day of school last Friday.  Since then we have been busy.  We have gone to the neighborhood pool a couple of times, spent the weekend with friends, and his baseball season is in full swing.  Watching 2nd graders pitch in baseball, is pretty darn entertaining!  The other night my 8 year old hit the ball every time he was up to bat, which in my opinion is all you can ask for!

Thursday Things

I am a little late in getting this up, but here it is!  As many of you know I went to Orlando a couple of weekends ago for the Food Blog Forum.  This was my first food blogging conference, and it was such a great experience.  I got to meet so many wonderful people, and listen to some amazing speakers.  Not to mention the conference was held at Walt Disney WorldJulie and Lindsay did an awesome job organizing the weekend, and making sure everything was perfect!

We stayed at the Grand Floridian for 2 nights, and the place is just gorgeous.  I arrived in my room to find Mikey Mouse out of a towel on my bed.

The first night we had a reception to get to know everyone.  We were given a few small appetizers to try.  Everything was presented to perfection.  Disney really does pay attention to every last detail.

After the reception a group of us headed off to Magic Kingdom.  We waited outside of the Grand Floridian to take the monorail into the park.

The next morning started bright and early with breakfast served to start the conference.  How cute are these bowls to serve fruit.

 

Lunch meant cupcakes. And lots of them!  They had all kinds of other great food too, but the cupcakes were definitely the center of attention.

The Steamy Kitchen couple; Jaden and Scott did a great job presenting.  They were inspiring, funny, and I loved how the whole family was involved in every part of the business.  White on Rice Couple; Todd and Diana were amazing.  They brought the audience to tears more than once, and their presentation was so moving and inspiring.

Sunday morning Whole Foods put on a brunch for us.  All of the food was delicious.  My favorite had to be the Biscoff Gelato though :)

After the brunch I spent the rest of the day with Katrina.  We stalked all the Star Wars characters at Epcot, before our flights back home.

 

It was such a fun weekend, and I am so glad I was able to attend.  The conference sold out in less than 5 minutes, so I feel pretty special to have gone!  Next year the conference is headed to North Carolina!

Let’s talk sides for a minute.  Do you struggle with sides at your house?  I can easily pick a main dish, but to come up with sides that are good for you and that my family will like, is a struggle.  My family isn’t big on veggies, so salads and roasted veggies don’t always work.  I could love on Roasted Brussels Sprouts and Roasted Asparagus, but I am alone on that at my house.

Thursday Things

Summer has arrived here in Colorado.  We went straight from winter (snow on May 1st) to summer.  This week has been in the mid 80′s.  Who needs spring, anyway!  This last weekend we spent 3 hours pulling weeds, tilling soil, and planting our garden.  We went a little crazy this year!  We have 2 kinds of green beans, 2 kinds of squash, Brussels Sprouts, 4 tomato plants, asparagus, parsnips, potatoes, sweet corn, strawberries, 3 hot peppers, a bell pepper, 2 kinds of basil, rosemary, thyme, parsley, and cilantro.  You can probably expect lots of recipes with veggies later in the summer :)

My spice cabinet has been a mess since we moved into this house, last July.  Every time I opened the cupboard I was annoyed, and spent forever digging for what I needed.  We had been talking about how to fix it and make it functional, pretty much since the day we moved in.  It was one of those things that just got pushed to the back burner though.  I finally got fed up enough, and took matters into my own hands.

I swear the weather can not make up its mind this year!  On Monday we had 80′s, but by Wednesday it was snowing.  We got enough snow that school was cancelled!  It is a good thing the rest of the week is in the 50′s, so it will melt quickly, but this is just insane!  Anyway….
