It has been awhile since I have posted a bread recipe. As a family of 3 we don’t go through a ton of bread in one sitting, so lots of my bread ends up in the freezer. Then every so often I get in a “clean out the freezer” mode. That is what has happened over the last month or so. It is finally pretty empty, so I am back to making bread!
Have you met Jennifer from Not Your Momma’s Cookie? I started following Jennifer just a few months ago, and have grown into a big fan. Every post I read, I think “we would be such good friends in real life!!” Jennifer is ridiculously talented at sugar cookies. Just look at these Hunger Games Cookies. She does regular desserts too like Ultimate Reese’s Magic Cooke Bars, and Let it Snow Cupcakes. Alright, enough from me.
You guys, we leave for Japan in 6 days!!! We are all so excited, and ready to be there. There is so much to do to get ready for any trip, but this trip seems like double the amount of work. It will all be worth it though, I am sure! This week is the last push for our eat healthy, and lose a couple pounds before we go. These muffins made a great guilt free side dish with soup, but hello! Bacon and Cheese!
Did everyone have a good weekend? We got tons of snow on Sunday with lots of wind. So most of our weekend was spent relaxing inside. After a few busy weeks in a row, it was nice to just relax. Yesterday, I shared with you a copycat version of Olive Garden’s Chicken Gnocchi Soup. You may have noticed some fluffy bread sticks in the pictures. Don’t worry, I didn’t leave you hanging. Today is bread sticks!
I think everyone knows about the infamous Red Lobster Cheddar Bay Biscuit. They are light, fluffy, and completely addicting. No matter what, I can’t keep my hand out of the basket when it shows up on the table. I have tried recipes at home before, but they all called for Bisquick. This time I wanted to start from scratch.
Focaccia has always been one of my favorite types of bread. I remember, probably 12 years ago making focaccia for the first time. I had this big plan to make fancy sandwiches out of the bread on a weekend. Amazingly enough the bread turned out, and I loved the sandwiches. My husband and I were engaged at the time, so I think I had even more to prove. I had to impress him! Well, I use a different recipe now, but this bread is requested often.
I know that baking bread intimidates a lot of people, but it doesn’t have to! If you measure correctly, and follow the directions everything should come out perfectly! I used to be scared of yeast, but after some trial and error, and realizing when it says to knead for 8 to 10 minutes, they really mean it. I have had way more success than misses over the past few years. Still scared? My good friend Roxana is seriously the bread master. She has a series called “Bread Baking 101“ going on. You should definitely check it out.
To me there is just something about fresh bread baking in the oven. It fills the house with the best aroma, and you just instantly feel calmer. I was having a stressful morning the other day, so I decided to head to the kitchen to work it out with some dough. Something about kneading the dough and watching it rise just made me feel better. I have never had this kind of bread before, and wasn’t quite sure what to expect. The oats give it body, texture, and a wonderful flavor.
Today #SundaySupper is celebrating its 1st birthday. I honestly had no idea it was that new. I joined this summer, and had seen it around for awhile at that point. So when Isabel announced this weeks event, I was shocked. I am so happy to be part of this wonderful and supportive group. Getting people back to having dinner around the dinner table is such an important thing, I am happy I can help spread the word each Sunday. So to celebrate today, we are looking back. Each of us have made a recipe from one of our fellow contributors, that was part of one of the past events. Kind of fun, huh?
I picked these dinner rolls from Carla at Chocolate Moosey. She made them for the Land O’ Lakes event this summer. Coincidentally that was my first event with the #SundaySupper group. I really had a hard time picking, there have been so many great recipes over the last year. But fresh bread won out in the end. I have a soft spot for fresh bread, I just can’t turn it down.
I made these rolls over the weekend, and they were so quick. They were ready in under an hour, and so soft and fluffy. The touch of honey leaves them with a hint of sweetness. I reheated them in the oven the next day and they were just as good. The whole family agreed that these will need to be made again and again in our house.
A light and fluffy dinner roll with a touch of honey
Ingredients
Honey Butter Dinner Rolls
From Chocolate Moosey
2 – 2½ cups flour
2 tbls sugar
2¼ tsp active yeast (1 package)
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp salt
¾ cup warm watner (120-130 degrees)
3 Tbls unsalted butter, melted and cooled
¾ cup shredded cheddar cheese
2 tsp honey
⅛ tsp garlic powder
⅛ tsp onion powder
Instructions
In a large bowl, combine 1½ cups flour, sugar, yeast, garlic powder, onion powder and salt. Add water and 2 Tbls butter. Beat for about 3 minutes, until smooth. Using a spatula stir in cheese, and enough of the remaining flour (1/2-1 cup) to form a soft dough.
Turn the dough onto a lightly floured surface. Knead for 4-6 minutes, until smooth. Add additional flour if the dough is sticky. Cover and let rest for 10 minutes.
Spray a pie plate or other round pan with non stick spray. After the dough has rested, divide into 12 equal portions. Roll into balls, and place in the pan. Cover and let rise for about 30 minutes, or until doubled in size.
Preheat oven to 375 degrees. Once the rolls have risen, bake for 11-14 minutes, or until lightly golden brown.
In a small bowl combine 1 Tbls butter, honey, garlic powder and onion powder. Heat for a few seconds, so it is thin. Remove rolls from the oven, and brush with the butter honey mixture. Let rolls cool until the glaze sets. Then serve.

Who doesn’t love an ooey, gooey cinnamon roll? Topped with icing? Oh my, I am getting hungry just writing this. Cinnamon rolls have to be one of my all time favorite breakfast treats. Previous to this, I had never actually made them from scratch though. My mom used to make sticky buns when I was growing up, but those are another post for another day…
Cinnamon Rolls are usually reserved for holiday breakfasts with my family. But due to the time commitment, I usually rely on the frozen Rhodes version. Don’t get me wrong, for a store bought frozen product, those are great. But probably never again. These are a quicker version that your traditional cinnamon roll, ready in about an hour. They aren’t quite your traditional bread dough. They are more like a biscuit, but not quite. Kind of hard to explain. They are tender, flaky, and full of cinnamon, and absolutely delicious!
I found these in Cook’s Illustrated awhile ago, I was just holding off on making them. Then I found myself with lots of buttermilk to use, and the perfect excuse for Saturday morning cinnamon rolls. The entire family loved these, and they have been requested again since. The buttermilk is key to making them soft and tender. We aren’t fans of cream cheese frosting, so I just used a vanilla icing on mine. But feel free to switch it up, with what your family likes. And I think your family would love you if you had these on the breakfast table Thanksgiving morning.
It is getting to be that time of year. The time where we all need gift ideas for neighbors, teachers, caregivers, the mailman etc. It can be hard to come up with those little gifts each year. I am a firm believer that, if you put the time and effort into making something, it will be much more appreciated. So I would much rather bake someone cookies than buy them a gift card. We moved into our house over the summer. We live on a long cul-de-sac, and I have yet to meet all of our neighbors. I was thinking of baking mini loaves of bread this year, and delivering them around the block as a way of meeting everyone. The first time I saw this bread was at Love From The Oven, where she used applesauce and flax meal. Then I saw Budget Gourmet Mom had a version with Greek Yogurt, and I was sold.
This made 4 mini loaves, or 1 full sized loaf if you don’t feel like sharing. Pumpkin and Biscoff were pretty much made for each other. This isn’t the first time I have had the combination, and it won’t be the last. This bread is tender, and full of the great pumpkin flavor you love. I printed the recipe, and glued it to a colored piece of paper. I then used ribbons and a plastic gift bag to package it. All set for delivery! If you really liked your neighbors you could get ceramic mini loaf pans. I have seen them at Michael’s craft store for $1.99.
