I am happy to report that jury duty yesterday lasted about two hours.  I got there to check in at 8:00, and I was home by 10:00.  The case that I was going to be considered for was going to be a 2 week fraud trial.  Thankfully, it was settled outside of court Sunday evening.  The man is now in jail, and will be there for quite a few years.  I am really glad I didn’t have to sit through a 2 week trial, but the thought of actually saying someone would have to go to jail is kind of scary.  That is a lot of responsibility!  I am just hoping it is going to be a long time before I get called again.

Shrimp is one of my favorite proteins to cook with.  I couldn’t have said that two years ago.  Not only did I not really like eating it, but I never knew when it was done.  So when I did cook it for my husband, I almost always over cooked it.  A lot has changed.  Now that I like shrimp, I can tell when it is done.  Plus it cooks so quickly, it is great for busy nights.

I have been wanting to try a veggie burger for a long time.  I have seen lots of recipes that use black beans, but those have kind of scared me.  I am not a fan of beans.  So when I found one with quinoa and mushrooms, I was all over it.  Super healthy, easy, and lots of great flavor; sounds like a great dinner to me! And when the leftovers are as equally delicious?  I am super happy.

I hope that all of you Mom’s out there had a wonderful Mother’s Day!  It was a gorgeous day here in Colorado.  We drove up into the mountains and did one of our favorite hikes in Rocky Mountain National Park.  They still had lots of snow up there, so we actually got to snowshoe one last time this season.  It was a little strange to be in the 70′s and have lots of snow around.  It was a great day to spend together as a family.

Last week we had our final cooking club of the year :( It was a fun year of planning dishes around a different color each month. To wrap up the year we ended with the rainbow. At first I wasn’t sure if that meant any color of the rainbow, or our dish should be a rainbow of colors. I figured it was the later, so that is what I did. Turns out I was right, that is what everyone did! Complete with over the top rainbow cupcakes and rainbow jello (layered with 8 different colors), it was definitely a colorful and delicious day!

Is anyone else amazed that it is May already?  I have no idea where the time went.  It seems like just yesterday we were celebrating Valentine’s Day.  If today is the first day of May, you know what that means right?  Cinco de Mayo is only 5 days away!!  I will admit before I was a food blogger, the holiday meant nothing to me.  I would eat Mexican every day of the week, if my husband would let me, it doesn’t take a holiday for that!

Today is an important day for two reasons.  First, it is my baby’s birthday!!!  I now have an 8 year old!  I can not believe how quickly he has grown up, and what a wonderful kid he is turning into.  He is smart, funny, creative, and super into sports.  He has his party with friends tomorrow night, and guess what they are doing?  Playing basketball and soccer.  Not a bad thing for a bunch of 2nd graders to burn off energy :)

I can’t believe I am posting 2 pizza recipes in one week.  I think I had 4 pizza recipes on the blog before this week.  You might think I have developed a bit of a problem.  Maybe I have, but are you really going to complain?  Chicken Tikka Pizza is a healthy pizza.  And this Roasted Veggie Pizza is pretty darn good for you as well.  The way I see it, the more healthy pizzas out there, the better!
