I am tired of snow!!  I know I have said it all week, but seriously 20 inches of snow in mid April is just wrong!  It makes me want to go back to Japan where they had gorgeous spring weather!  You can see the other write ups I wrote on Japan Thursday Things last week and Thursday Things from the week before.

Week in Review 7/28/12

This is the last weekend in July, that is just crazy!  I can’t believe how fast the summer has gone.  My in-laws left yesterday, so now it is time to get back to normal, whatever that is!  We haven’t had normal in forever.  Hopefully this weekend we can get a little more organized from the move, although we have made a lot of progress over the last week.  Next week I will actually start cooking again.  I cooked plenty this week, but it was quick, nothing new, just get food on the table for a crowd kind of meals.  I am excited to branch out and experiment in my new kitchen!

Here is what I was up to this week:
Peach Lemonade – fresh peaches and tart lemons make a very refreshing summer drink.
Chocolate Applesauce Muffins – chocolate muffins with only 130 calories each.
No Bake Peanut Butter S’mores Bars – S’mores and peanut butter come together in one amazing treat!  Plus, no oven or campfire needed!
Biscoff Caramel Cookie Bars – I made Biscoff flavored caramel, and layered it with chocolate chip cookie.  Serious deliciousness!

Corn Gratin by Savory Simple – fresh corn is in season and this sounds amazing with it!
Coconut Curry Shrimp by Epicurean Mom – this sounds incredible.  I love all the flavors, and have been looking for more shrimp recipes!
Thai Peanut Noodles with Shrimp by Curry for Comfort – I told you I was looking for more shrimp recipes :)   I love Thai flavors, and this pasta sounds delicious!
Smoky Corn & Grilled Avocado Salad with Chipotle Caesar Dressing by Patty’s Food – corn and avocado are some of my favorite summer ingredients.  The smoky dressing sounds perfect with this!
Tamarind Marinated Baked Chicken Wings by Lemons & Anchovies – this chicken looks wonderful, and I had no idea what else to use the jar of Tamarind concentrate for!

Week in Review 6/23/12

Yesterday was one of the longest days ever.  My husband asked that I take his car to get the oil changed.  I had to go to a store to return some stuff anyway, it was convenient, of course I will take it.  Well, I get there and it will be a 30 minute wait for them to get to my car, plus then the 30 minutes for my car.  Not a big deal, I had my return, plus it is attached to the mall.  He was supposed to call when it was done.  My son and I get back there 90 minutes later (he never called), and they aren’t done!  They had found some other minor problems, and they didn’t know what to do.  H-E-L-L-O, I gave you me cell number for a reason!  At that point I wasn’t going to wait any longer, so I said I would deal with it later.  Still it took 2 hours and 45 minutes for me to get out of there!! INSANE, especially with a kid!

Nutella Magicshell – A favorite ice cream topping made with Nutella – only 2 ingredients.
Homemade Peanut Butter – Only 4 ingredients and less than 10 minutes to homemade peanut butter.
Chocolate Cookies n’ Cream Chunk Cookies – Chocolate cookies with Oreo’s, Chocolate Chips, and Hershey’s Cookies n’ Cream Candy!
Curried Potatoes with Chickpeas – Potatoes and chickpeas spiced with curry powder, and topped with a spicy yogurt sauce.
Pork Carnitas – Made in the slow cooker, so perfect for summer and super easy.

Week in Review 6/16/12

Happy Father’s Day to all the Dad’s out there!  Are you planning anything special for the Father’s in your life this weekend?  We had a few things planned, but not sure they will happen any more.  My husband needed some immediate dental care on Thursday, so he is kind of on the fence with activity.  It has been tough to come up with soft enough food for him to eat so far.  So our food plans, definitely will be on hold.  Hopefully by Sunday he will be closer to back to normal!  Either way, we will try to make him feel special for the day.

Here is what I was up to this week:
Bacon Avocado Grilled Cheese – I was party of #SundaySupper for this week.  I made a grilled cheese sandwich with avocado, bacon, and tomatoes.
Biscoff Stuffed White Chocolate Chip Cookies – Biscoff Spread stuffed inside of a white chocolate chip cookie.  Biscoff is simply amazing, addicting stuff!
Swanky Caribbean Lemonade – Grand Cayman’s version on lemonade.  Feel free to add rum, for an adult version.
Fire Roasted Salsa – Super easy salsa made with canned fire roasted tomatoes.
Chocolate Chip Cookie Dough Sandwich Cookies - Chocolate Chip Cookie Dough sandwiched between 2 Chocolate Chip Cookies!
Thai Green Curry Chicken – Easy Thai Curry.  Green curry paste adds lots of flavor and a great green color.

Week in Review 5/26/12

It is Memorial Day weekend!  Hopefully the weather is supposed to be nice where you are, so you can enjoy the long weekend.  We have plans to go hiking one day, and enjoy a barbeque with friends another day.  Should be a nice, relaxing weekend.  My 7 year old only has 3 1/2 days of school left.  I really can’t believe how fast time as gone by.  It seems like he was just starting kindergarten, but in about a week I am going to have a 2nd grader.

Here is what I was up to this week:
Quinoa Salad - A virtual potluck where I brought Quinoa with veggies and a cilantro lime vinaigrette
Double Chocolate Chobani Muffins – Moist and delicious chocolate muffins, make with Greek yogurt.
Cookies n’ Cream Fudgsicles - Only 3 ingredients to make these creamy frozen treats.
Lemon Garlic Shrimp and Grits – Quick, easy, and light lemon and garlic shrimp served over grits.
Watermelon Fizz – A fun and refreshing drink for summer.  Just add Gin for an adult version!

Week in Review 4/14/12

My parents are here this weekend!  Yesterday we went to tour Coors Field, where the Colorado Rockies play.  My son is obsessed with sports, so he loved it.  Tomorrow is his first flag football game.  He has a double header, so it might be a long afternoon.  He is so excited.  I am thinking this is going to be hilarious.  A bunch of 6 year olds trying to play an organized game of football with rules, and structure just doesn’t seem possible to me.  Guess we will see!

Week in Review 4/7/12

Are you ready for Easter?  I think I am ready.  I have the menu planned, and the basket stuff in the closet.  At some point I guess I need to prep the basket, and fill the plastic eggs.  I boiled eggs yesterday, so we can decorate them today.  Should be a fun weekend!

Easter Basket Cupcakes – Super cute cupcakes that look like mini Easter baskets.
Calzones – Homemade calzones, very versatile and way easier than you think.
Chocolate Chip Cookie Pancakes – Pancakes that taste like warm chocolate chip cookies, and only 275 calories a stack!
Indian Spiced Quiche – Spinach and Potatoes with lots of Indian spices.  Great for brunch or a light dinner.
Double Cookies and Cream Kiss Bars – Chocolate Chip Cookies, Oreo Cookies, and Cookies and Cream Hershey Kisses together in one amazing bar!

Week in Review 3/24/12

The weekend is here!  Last night we had movie night as my husband’s work.  We got dinner, popcorn, candy, drinks, and watched Happy Feet 2.  Love family friendly work sponsored events!  This week I joined a cooking club.  It is a group of women that meet once a month, in my neighborhood.  Each month they focus on a different region of the world.  Yesterday was the Middle East.  For the first time ever (I think the club has been going on for a few years, and each year they pick a different theme), the group went out to lunch.  We went to a local Afghan restaurant.  The owner is actually from Afghanastan, so I think it was pretty authentic.  It was delicious!  I had a Chicken Kabob (boring, I know), Potato Korma (amazing), and Naan bread.  The whole meal was really good, I was impressed!  Next month is the Mediterranean!

Here is what I was up to this week:
Pretzel Rolls – Giant soft pretzel in the form of a dinner roll, so easy to make
Beef Chili – Hearty and thick chili, with or without beans
Indian Spiced Nuts – Cashews and Pistachios roasted and mixed with a blend of Indian spices
Strawberry Pineapple Smoothie – A healthy smoothie with strawberries and pineapple
Brownie Batter Pancakes – Pancakes that actually taste like brownie batter, and they aren’t horrible for you either

Week in Review 3/10/12

Spring break has started here.  My son had off yesterday, and then all this next week.  We don’t have much planned, so hopefully we can relax and hang out.  We have plans go to a movie, have lunch with my husband, and maybe go bowling one day.  Fun and exciting times!! This weekend we get to go meet some friends from Iowa who are driving through on their way to go skiing for their spring break.  We won’t get to see them for very long, but it will be nice to catch up a little.

Chocolate-Granola Apple Wedges – A healthy and fun snack.  Apple slices dipped in chocolate and then dipped in granola.
Kool-Aid Marshmallows – Marshmallows flavored with Kool-Aid.  Super fun, and way easier than you would ever think.
Roasted Garlic Vinaigrette – Seriously good salad dressing.  Lots of yummy roasted garlic flavor.
Onion Rings – Foodbuzz Tastemaker taste test of Alexia brand Onion Rings
