Cheesy Corn Dip

For me it is a couple of things. My husband says I have a one track mind when it comes to dessert, and Skillet Cookie is the only thing I want to make or eat when we entertain. The other thing is this corn dip. I made it pretty much every time I have to take an appetizer to a get together. And it disappears every time.

This cheesy hot corn dip is a hit with kids and adults alike. Every time I show up with my little red crock pot my friends ask if I made the corn dip recipe. So yeah, I have become known for it. With football season in the air, it is the perfect tailgating and game day snack to make!

What’s In Corn Dip

  • Corn
  • Jalapeno
  • Bacon
  • Cream Cheese
  • Sour Cream
  • Cheddar Cheese
  • Onion Powder
  • Garlic Powder

How To Make Cheesy Corn Dip

  1. In a large bowl mix all of the ingredients together until they are well blended.
  2. Place into a baking dish or a small crock pot and spread into an even layer.
  3. If you are baking it, bake for about 30 minutes until it is hot and bubbly. If using a crock pot heat on low for about 3 hours until it is nice and hot.
  4. This is best served warm with corn chips for dipping.

Can You Make Corn Dip Ahead Of Time

Absolutely! This is a great dip to have assembled and ready to just heat up when you are. You can mix everything together the day ahead and then just put in the crock pot a few hours before you are ready to serve it or take it with you to the event and heat it up there.

It is one of those recipes you can make ahead of time, and then just heat when it is time to serve as well. Hot Sausage Dip is another like that. You can assemble the day before, then just heat the day you want it.

If you have been around here for awhile, you know that I have partnered with Iowa Corn in the past. In 2016 I went on their Iowa CornQuest trip and was able to experience and learn so much about corn production in our country. 

About 90% of the land in Iowa is devoted to agriculture, and they produce about 16% of the corn for the entire nation. But only 1% of that is actually sweet corn that we eat. The majority is field corn used to feed livestock, produce clean-burning ethanol fuel for our vehicles and 4,000 everyday products!

So when you are planning for game day, your next party, or even just hanging out and you want to change up your appetizers try this corn dip. It is a staple in our house and that will not be changing anytime soon.

Cheesy Corn Dip

Cheesy Corn Dip - a delicious hot dip with jalapeno, corn, bacon, and plenty of cheese! Comes together in minutes, and perfect for snacking or entertaining.

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 3 cups corn kernels
  • 1 jalapeno, finely chopped (remove seeds for milder dip)
  • 4 strips bacon, cooked and crumbled
  • 1 (8oz) package cream cheese
  • 1/2 cup sour cream
  • 1 1/2 cup cheddar cheese, shredded
  • 1 tsp onion powder
  • 1 tsp garlic powder

Instructions

  1. In a large bowl combine all of the ingredients until well blended.
  2. Pour into a crock pot or baking dish.
  3. Cook on low for 4 hours in crock pot for bake at 350 for 30 minutes, or until bubbly in the oven.
  4. Serve with corn chips for dipping.
