Mother’s Day weekend is here.  Are you ready?  Do you have a great plan for your Mom?  My mom is actually coming to our house next week, so I am saving my gift until then.  I think it is so much better to give a person a gift in person, even if it is a few days late.  Hopefully she agrees 🙂  As for our house, I am not sure what we are doing.  My son has the week off from football, so we have the whole weekend free.  I am hoping I get to sleep in, and not have to cook, or do the dishes for the day.  I like to think I am pretty easy when it comes to holidays.  My husband might disagree.

Since it is time for the weekend, what a better time for a fun cocktail.  I originally saw an idea of this in Everyday Rachael Ray magazine, but then I changed it up and made it into a cocktail.  If alcohol isn’t your thing, just leave out the vodka and add more of the sparkling water.  I love a fizzy cocktail, so I used flavored sparkling water in this drink.  This weekend is Mother’s Day, this cocktail would be great to serve at your Mother’s Day get together!

Cherry Almond Vodka Cocktail - sweet, tart, and fizzy { Dinners, Dishes, and Desserts}

Cherry and Almond go so well together in just about any form.  Cookies, cakes, and even in cocktails.  Just a tiny bit of almond extract is all you need to get that great flavor combination.  Frozen cherries are perfect to give it that frothy, super cold feel.  Cherry season is almost here though, so if you have fresh pitted cherries they would work well too, you would just want make sure you have lots of ice!

Classic cherry-almond combination in a fun and fruity vodka cocktail.

Total Time 10 minutes

Ingredients

  • 1 (12 oz) bag of frozen pitted cherries
  • 1/4 cup sugar
  • 2 Tbls fresh lime juice
  • 1/2 tsp almond extract
  • 1/2 cup vanilla vodka, (or regular vodka)
  • 1 1/2 cup cherry flavored sparkling water

Instructions

  1. In a blender combine cherries, sugar, and 1/4 cup of vodka. Process until the smooth.
  2. Add lime juice, almond extract, and remaining vodka until well combined.
  3. Pour into a pitcher, and mix in the sparkling water.
  4. Serve over ice.
