Chile Lime Flank Steak

Grilled Chile Lime Flank Steak – grilled flank steak that is marinated in olive oil, lime juice, cilantro, and jalapeno. It goes on the grill for just minutes for a super fast meal the whole family will love. 

As soon as the weather gets warm I love firing up the grill and cooking outside.  There is just something about meat sizzling on the grill that makes me happy.  And grilled flank steak is one of the easiest to make, I would be happy having it every week if it were up to me!  You can even turn the meat into Flank Steak Tacos if you want to turn taco night into grilling night.

In the summer we live on summer grilling recipes. Anything that can be grilled and not heat up the house is an option at dinner time. I want something I know the family is going to eat, that doesn’t take a ton of time for me to prepare, and then is easy to clean up. Is that too much to ask?  And this flank steak always gets rave reviews.

WHAT IS FLANK STEAK?

Technically flank steak is a not a steak in the traditional sense like a ribeye or a filet is. Flank steak is a cut of beef that is taken from the lower chest/stomach muscle area of the cow.  It is a very lean cut of meat that is very flavorful.

How To Cook Flank Steak

I think it is best cooked on the grill.  If you don’t have a grill, you can achieve something similar under the broiler.  But the high heat really seals in the juices and give it that delicious crust.  It is a very thin piece of meat, so it cooks in just minutes. 4 minutes per side if you want medium rare. So you can really have dinner on the table in about 20 minutes! Can’t beat that on a busy day!

How To Grill Flank Steak

  1. The first step is to marinate the meat.  This has a chili lime marinade that imparts great flavor through the entire piece of meat.  Combine all the the ingredients and let the meat marinate for about 10-20 minutes.  There is a lot of lime juice, so you don’t want to go for much longer or the meat will start to break down.  
  2. Heat the grill to a high heat.  This doesn’t take long to cook, and in order to get the sear and color you want, starting with a high heat is key.
  3. Discard the marinade and season the steak with salt and pepper before placing it on the grill.  For medium rare you only need to cook for about 4 minutes a side.  
  4. Remove and let the meat rest for 5 minutes before slicing.

How to Cut Flank Steak

When you are cutting you want to make sure you slice against the grain.  This will ensure you get a tender piece each bite.  Just place the cooked meat on your cutting board and look at which direction the lines of meat go.  Then cut in the opposite direction of that.  Your meat will be super tender every time.

This grilled flank steak recipe is a staple in our house.  Whenever it is on sale at the store I buy a couple, so they are always in the freezer.  So fast and easy to thaw and get dinner on the table in no time on busy nights.

Total Time 30 minutes

Ingredients

  • ½ cup cilantro
  • 3 Tablespoons lime juice
  • 1 ½ Tablespoons olive oil
  • 2 tsp minced garlic
  • 2 tsp jalapeno, seeded and minced
  • ½ teaspoon crushed red pepper
  • 1 pound flank steak

Instructions

    1. In a small food processor combine cilantro, lime juice, olive oil, garlic, jalapeno, and crushed red pepper. Pulse until smooth.Pour into a shallow dish or a zip top plastic bag. Add flank steak, mixing until well coated. Let set for 10-20 minutes.
    2. Preheat grill to high (about 450 degrees).
    3. Discard marinade and add steak to the grill. Season steak with salt and pepper.Cook for 4 minutes per side for medium rare.
    4. Remove from heat, and let rest for 5 minutes before slicing.
    5. Slice flank steak against the grain for tender pieces of meat.
