Well all know that I like to bake, right? I realize that not everyone shares this love. But just because you don’t like to bake or don’t have the time to bake, doesn’t mean you shouldn’t enjoy homemade goods. Really, those store bought chocolate chip cookies are ok, but not even close to what you can make at home.
When I was contacted about these hand-made cookie pies, I was excited to see what they were all about. I love the idea that you can get something sent to your door that would taste like you made it at home. Barbara’s Hand-Made Cookie Pies has so many flavors to pick from. There are seasonal varieties like a Caramel Apple Cookie Pie and a Peppermint Bark Cookie Pie. But there are also traditional flavors like Chocolate Chip, Peanut Butter Cup, and Honey Oatmeal Raisin. The crust for all of the cookie pies is a butter cookie. Which by the way you buy separately if you wanted to fill it yourself. You can get it already formed ready to bake, just disks of dough, or a frozen ball of dough. Seriously, the possibilities are endless with this dough.

I chose the Chocolate Caramel version. It is a buttery caramel, sprinkles of toffee chips, and a drizzle of chocolate. The caramel is decadent and delicious. The toffee chips work perfectly with it, and add some great texture. And chocolate on top is always a good idea.
