Chocolate Chip Cookie Pancakes


We spent last night working with my 6 year old on addition facts.  It was stressful. Trying to get someone to memorize 8+6=14 is not something I am good at.  You just know it, why don’t they?  I really don’t know how teachers do it!

I could have used these to de-stress after he went to bed.  Unfortunately they are all gone.  I did have some in the freezer for awhile, but my 6 year old goes through pancakes like no bodies business.  Did you know you could freeze pancakes?  I do it all the time!  Just as easy as buying the frozen ones at the grocery store.  Just make a giant batch, let them cool, place in a freezer bag, and freeze.  Works great to just microwave a couple on a busy morning.

These came about after I made Brownie Batter Pancakes.  I was thinking what other dessert flavors I could try.  Why not chocolate chip cookies?  These have all the major players of a chocolate chip cookie, and you get to eat it for breakfast!  They really aren’t horrible for you either, check out the stats. Now I am trying to figure out the next dessert pancake to try!

Nutritional Info: Serves 4, Calories : 274, Fat: 12 grams, Protein: 4 grams


Chocolate Chip Cookie Pancakes

1 cup flour
1  tsp baking soda
1/2 tsp salt
2 Tbls brown sugar
2 Tbls butter, melted
1 tsp vanilla
1  cup Almond Milk (or skim milk)
1/3 cup Chocolate Chips

Preheat griddle or large non-stick skillet to medium heat.

In a large bowl stir together flour, baking soda, salt, and brown sugar.  Add butter, vanilla, and milk.  Stir until combined.  Fold in chocolate chips.  Using 1/4 cup measuring cup, pour batter into preheated pan.  Cook until the edges are starting to set, and bubbles are forming on the surface.  Flip, and cook for an additional 2 minutes. Best served warm.

  4. I have no idea how teachers do it either, my girls remember things well, but I’m not quite sure if they actually got it, so a little stressful! But the pancakes look great, and thanks for the tip on freezing them! :-)

  7. I freeze almost everything and I never thought to freeze pancakes. How fantastic!

  8. Erin these are fabulous. They would make a great treat on Easter. Or any weekend for that matter. I did a year of volunteering for the math program for my daughter’s school. I would go in 3 days a week and try to get math to click for kids who were struggling. I found using a visual helped until it clicked. I used change some days, candy some days, toys some days. Let’s just say they liked the candy days cuz it meant they got the candy at the end of the hour. Lol!

  22. I love the dessert pancake trend! These look perfect! Maybe try letting your six year old count chocolate chips as tangible evidence for addition…and then talk about how with enough practice, they’ll just naturally remember the solutions. And when memorization does set in, celebrate with chocolate chip cookies…or more pancakes!

  27. What a great recipe! I freeze pancakes too. Make a big batch onthe weekend and freeze them for quick breakfast during the week. My daughter would love these, I’ll have to keep them in mind forr when I do another big batch.

  36. I am an awful teacher too. If I understand something I kind of think every one should. It is so hard to explain why something is the way it is, especially math. Lovely pancakes! I would enjoy these any morning of the week.
