Chocolate Chip Cookie Pancakes

We spent last night working with my 6 year old on addition facts.  It was stressful. Trying to get someone to memorize 8+6=14 is not something I am good at.  You just know it, why don’t they?  I really don’t know how teachers do it!

I could have used these to de-stress after he went to bed.  Unfortunately they are all gone.  I did have some in the freezer for awhile, but my 6 year old goes through pancakes like no bodies business.  Did you know you could freeze pancakes?  I do it all the time!  Just as easy as buying the frozen ones at the grocery store.  Just make a giant batch, let them cool, place in a freezer bag, and freeze.  Works great to just microwave a couple on a busy morning.

These came about after I made Brownie Batter Pancakes.  I was thinking what other dessert flavors I could try.  Why not chocolate chip cookies?  These have all the major players of a chocolate chip cookie, and you get to eat it for breakfast!  They really aren’t horrible for you either, check out the stats. Now I am trying to figure out the next dessert pancake to try!

  1. I don’t envy you for the math lessons. I’m seriously not looking forward to when that happens here! These pancakes are the perfect stress reliever! :)

  2. OMG. Erin. I am SO HUNGRY reading this post and longing at these pictures. These are too cute!! pinning them for sure :)

  3. I’m seeing a fancy breakfast in my future.

  4. I have no idea how teachers do it either, my girls remember things well, but I’m not quite sure if they actually got it, so a little stressful! But the pancakes look great, and thanks for the tip on freezing them! :-)

  5. OH wow. These look so so so wonderful.

  6. Delicious looking breakfast! I could eat this every day!:))

  7. I freeze almost everything and I never thought to freeze pancakes. How fantastic!

  8. Erin these are fabulous. They would make a great treat on Easter. Or any weekend for that matter. I did a year of volunteering for the math program for my daughter’s school. I would go in 3 days a week and try to get math to click for kids who were struggling. I found using a visual helped until it clicked. I used change some days, candy some days, toys some days. Let’s just say they liked the candy days cuz it meant they got the candy at the end of the hour. Lol!

  9. What a fantastic idea for pancakes…they look amazing!

  10. These look amazing! Chocolate chip cookie pancakes?! YES

  11. Ooooh my, Erin, I want to devour my screen right now. They look sooo gooey and melty! Yum.

  16. Okay, these look like cookies. I want to eat them for every meal of every day. YUM. I love your recipes, Erin!!

  17. I know what you mean about math.. but don’t stress. It finally “snaps” into place for the kids and they get it. :) I love you creative you are being with breakfast foods… oatmeal.. pancakes! YUM!

  18. I want to wake up to these tomorrow!

  19. Thank you for saving me from another bowl of oatmeal tomorrow!! I’m totally making this!

  20. We’re just starting on numbers, letters and the such with Josh. My sixth time on this trip and I want it over lol.

On another note, I really want these pancakes though I am sure I could eat more than 275 calories worth hehe

  21. I’ll take a big batch, or two of these!! Can I come over for breakfast?! ;-) I’m having the same issues with my oldest. I was sooooo not meant to be a teacher! They definitely do not have an easy job!

  22. I love the dessert pancake trend! These look perfect! Maybe try letting your six year old count chocolate chips as tangible evidence for addition…and then talk about how with enough practice, they’ll just naturally remember the solutions. And when memorization does set in, celebrate with chocolate chip cookies…or more pancakes!

  23. These look terrific! I don’t know how teachers do it, either….they certainly are a breed apart!

  24. Yeah, these would disappear before they made it to the freezer. I used to keep homemade waffles frozen for a quick breakfast…I need to do that again! Great recipe, Erin!

  25. I’m ready for my pancake breakfast! These look very good and I like the calorie count;-)

  26. Yum I love chocolate chip pancakes but ones that taste like cookies even better.

  27. What a great recipe! I freeze pancakes too. Make a big batch onthe weekend and freeze them for quick breakfast during the week. My daughter would love these, I’ll have to keep them in mind forr when I do another big batch.

  28. Oh I just absolutely love pancakes, and these look incredible! Perfect for a long weekend. :)

  29. They look fun and will be popular in my house :) I am going to make a batch now! Thanks for sharing :)

  32. My kids and I will love this for breakfast! :-) I also freeze pancakes too so kids can have them on week day morning sometimes. :-)

  33. Oh my god! These look delicious, so fluffy & really just calling out my name right now! Seriously just the thought of a chocolate chip cookie in pancake form is making me drool! YUM!

  34. Cookies in pancake form?! Yes, please!

  35. Priscilla says:

No wonder your son goes through pancakes so quickly :) I predict your house is going to be very popular for sleepovers!

  36. I am an awful teacher too. If I understand something I kind of think every one should. It is so hard to explain why something is the way it is, especially math. Lovely pancakes! I would enjoy these any morning of the week.
