In my quest to eat a little better, I have to come up with some healthy snacks! I work from home, so most of the time my meals and snacks are at home. Which is a pro and a con all at the same time! I know I need to eat more fruit and veggies, so when I saw this quick and easy snack in Cooking Light, I knew I had to try it. Plus, it seemed like a fun way to get my 6 year old to eat fruit after school!
These were super easy to make. And I could see adapting these in lots of fun different ways. I added a few sprinkles to my granola for color and fun, since I was appealing to a 6 year old. Chopped up nuts, other cereals, dried fruit, M&M’s, so many ways you could make these. I even used a little caramel for a few slices, because I had a handful of caramel baking bits in my cupboard. I made these in the middle of the day, so I drizzled a little lemon juice on the apples so they wouldn’t turn brown before my son came home from school. They were a definite hit when he got home, and will be made again!

Chocolate-Granola Apple Wedges
Adapted from Cooking Light
2 oz. Semi-Sweet Chocolate Chips, melted
1/3 cup Granola
1 large Apple, but into wedges (I used Braeburn)
2 tsp Sprinkles
1 tsp Lemon Juice, optional
Place the granola on small plate, crush lightly. Mix in the Sprinkles. Drizzle the lemon juice over the apple wedges if not serving right away. Dip apple slices into chocolate, and then coat in the granola mixture. Place skin side down on a plate, and refrigerate for 5 minutes or until chocolate is set. Serves 4

You know what Erin… I’ll be making this with the kids for today’s snack! How easy and fun! My kids love apples already but I think this is going to be my new “treat” for them – better than other sugary treats for sure! Fantastic!
These are so cute! What a great way to get kids to eat their fruits! I’d give ‘em a whirl with some dark chocolate so I’d feel even LESS guilty about eating chocolate.
Mmm I bet some chopped up nuts would add a nice crunch to this delicious sounding snack! I’m all for this healthy, involving chocolates and other fun things like sprinkles, dishes. Makes me believe I’m not eating healthy at all! Great idea!

These look delicious. I love fruit any way but topped with chocolate is always a plus. I work about 5 minutes from my apartment. I like to go home for lunch to get extra stuff done and physically leave the office but I always eat way more on those days because there are so many options and I can make much more elaborate meals.
