Cookie Dough Baked Oatmeal – make “baked” oatmeal in less than 5 minutes that will remind you have eating cookie dough!

Oatmeal is a classic breakfast for so many people! But sometimes it can get a little boring, so you want to mixed it up. This Cookie Dough Baked Oatmeal is a fun twist that you are going to love, even on those busy mornings.

Cookie Dough Baked Oatmeal

I found this recipe over 10 years ago, when I first started blogging. The original recipe was on a vegan site called Chocolate Covered Katie. Seeing as how I am not vegan, I did change the recipe some to use what I have on hand. And over the years have changed it a little further to give it the taste that I was going for.

It is a quick and easy breakfast you can make in less than 5 minutes, so even on busy mornings you can have a filling and delicious breakfast.

What You’ll Need

  • Old Fashioned Oats
  • Apple Sauce
  • Milk – I use skim milk because it is what I have on hand. But almond milk, oat milk even whole milk will work great.
  • Creamy Peanut Butter
  • Agave – any sweetener will work. Honey, maple syrup, stevia, sugar etc.
  • Vanilla Extract
  • Salt
  • Chocolate Chips – I like to use mini

How To Make Cookie Dough Baked Oatmeal

  • Mix Dry Ingredients. Combine oats and salt in a small bowl.
  • Mix Wet Ingredients. Stir together milk, peanut butter, applesauce, agave/honey and vanilla. 
  • Combine. Spray a small microwave safe bowl. Mix together the wet and dry ingredients and pour into prepared bowl. Gently stir in a few mini chocolate chips
  • Cook. Microwave on high for 2 minutes.  Remove and top with additional chocolate chips if desired.

Recipe Tips & Variations

  • Any liquid you like will work fine for this, even water. Almond milk works great if you want to cut back on calories. Whole milk works great if you want it thick and creamy. So use whatever you have and normally use to make oatmeal. I use skim milk because it is what I have on hand.
  • Can’t use peanuts? Any nut butter will work great or even sun butter or wow butter if you can do tree nuts either.
  • Mix up the flavor! Stir in chopped apple and cinnamon instead of chocolate chips for a delicious almost apple pie version. Peanut Butter & Jelly Baked Oatmeal is another favorite.
  • The sweetener you use is entirely up to you! My pantry always has agave in it, so it is what I grab. But maple syrup, honey, even just a little plain sugar works. If you like monk fruit sweetener or stevia those work as well.

How To Store Leftover Baked Oatmeal

This does make a rather large serving, so you can also divide into two small bowls when you are cooking it. Cover any leftovers and store in the fridge for 2-3 days. When you are ready to serve just microwave for about a minute until it is warmed through.

What Kind Of Oats To Use

I like to use old fashioned oats with most oatmeal recipes because I think they stand up to the cooking process, give a really good texture that is hearty and what I am looking for. That being said, you can use quick cooking oats if that is all you have or what you like. The cooking time will just change.

Using Quick Cooking Oats – Microwave for 1 minute
Using Old Fashioned Oats – Microwave for 2 minutes

Ingredients

  • 1/2 cup old fashioned oats
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup skim milk
  • 1 Tablespoon creamy peanut butter
  • 1 Tablespoon agave (honey, maple syrup or other sweetener)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 Tablespoons mini chocolate chips

Instructions

  1. Combine oats salt in a small bowl. 
  2. Stir together milk, peanut butter, applesauce, sweetener and vanilla. 
  1. Spray a small microwave safe bowl. Mix together the wet and dry ingredients and pour into prepared bowl. Gently stir in 1 tablespoon chocolate chips.
  2. Microwave on high for 2 minutes.  Remove and top with remaining chocolate chips

I don’t have microwave and what s about baking oven ?

Bake at 350F for maybe 25-30 minutes. You want it to be set when you take it out of the oven.
