Gingerbread Men Cookies

Gingerbread Men Cookies – classic Christmas cookies full of all those delicious spices.  Decorated with white frosting to make them extra fun and festive. 

I love classic Christmas cookies.  Things like Chewy Molasses cookies that get made every year and everyone loves them.  There is just something about tradition that I love, and always had.  Probably to a fault when I was younger.

My husband has a few requests every year, Frosted Sugar Cookies are ton the top of the list.  But lately he has added these Gingerbread Men Cookies to the list.  They are not something that I had growing up, so I had to find one that I knew he would love.

My husband said his mom made gingerbread men cookies a few times when he was younger, so I asked her for her recipe.  She got the recipe from a free cookbook the electric company gave out in 1958.  So you could say the recipe has been around a few years.

I did up the spices a little bit, to give it that full on gingerbread flavor.  Aside from that, I kept it the same.  These gingerbread men cookies are easy to make thick and chewy or thin and crispy.  I like cookies thick and chewy, so I rolled the dough out rather thick, and baked for 10 minutes.  If you want the crispier you can roll thinner or bake for a little longer.

Usually I am a chocolate dessert person, and if there is peanut butter involved even better.  So Reese’s fudge is usually at the top of my list when it comes to Christmas cookies. But I love all the spices in these cookies, they are just something different than the normal.

This Gingerbread cookie recipe has been around forever, and it is still a definite favorite.  You know that means they are good!  Plus you can get the kids in the kitchen to help decorate them. I used just white frosting here, but you can use colors to make them even more festive!  Decorating cookies was always my favorite when I was a kid.

Gingerbread Men Cookies

Gingerbread Men Cookies - classic Christmas cookies full of all those delicious spices.  Decorated with white frosting to make them extra fun and festive. 

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes

Ingredients

  • 1/2 cup boiling water
  • 1/2 cup butter, , softened
  • 1/2 cup dark brown sugar
  • 1/2 cup molasses
  • 3 to 3 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground ginger
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves
  • 1 Tbls cinnamon

Instructions

  1. In the bowl for an electric mixer pour water over the softened butter. Add brown sugar and molasses, mix well.
  2. In a separate bowl whisk together 3 cups flour, baking soda, salt, ginger, nutmeg, cloves, and cinnamon. Add to molasses mixture, blend well. Add more flour if the dough is really stick.
  3. Cover and chill for 2 hours.
  4. Preheat oven to 375 degrees
  5. Roll dough onto a lightly floured surface about 1/8 to 1/4 inch thick. Cut into "men".
  6. Bake for 10 minutes. If you want crispy cookies, you can bake a little longer. Remove from oven, and allow to cool.
  7. Frost if desired.
