Did you know that July is National Grilling Month? There are just so many food holidays I can’t keep up! But this sounds like one I can get behind. A whole month of grilling sounds good to me. Especially since our new grill showed up last week! Plus grilling is a pretty healthy way to cook, so it is a win all around.
To help kick off National Grilling Month Pompeian Olive Oil wants to share a few recipes and tips to get you started. Pompeian Olive Oil is partnering with Hungry Girl to create easy-to-follow, healthy grilling recipes that are inspired by the Mediterranean diet. Lisa Lillien, also known as Hungry Girl, has created three delicious grilling recipes using the Pompeian family of products for all of your summer cookout occasions, including: Hungry Grilled Romaine Salad, Jalapeno Peach Shrimp Skewers, Spicy Mustard Chicken Kebabs.
I have always wanted to try grilling Romaine for a salad, so I decided to put the new grill to use, and make a salad. I loved the slightly charred tasted of the Romaine. It was warm, and then the cool tomatoes, onions, and avocado on top. It was a great contrast, and a fun twist on a salad.
Grilled Romaine Salad
Slightly charred romaine lettuce topped with a balsamic vinaigrette dressing
Ingredients
- 1 heart of romaine lettuce , halved
- 1/2 tsp olive oil
- 1/4 cup red onion , diced
- 1 roma tomato , diced
- 1 avocado , diced
- 1/4 cup sliced almonds
- 1/4 cup feta or shaved Parmesan , optional
- Vinaigrette
- 1 Tbls fresh basil , finely chopped
- 2 Tbls Pompeian Balsamic Vinegar
- 1 Tbls Pompeian Extra Virgin Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat grill to high.
- To prepare the vinaigrette combine balsamic vinegar, 1 Tbls olive oil, and fresh basil. Whisk until well combined. Season with salt and pepper.
- Brush 1/2 tsp olive oil onto the cut side of the lettuce.
- Place on grill cut side down, grill for 1-2 minutes, until slightly charred.
- Remove from grill and top with onion, tomato, avocado, almonds, and cheese if using.
- Top with the prepared vinaigrette to serve.

I adore a great grilled romaine salad. Hubby and I just got back from having lunch and it was on the menu. Toyed with ordering. Yours looks very fresh and tasty!
