Healthy(er) Zucchini Brownies

Zucchini Brownies – Fudgy zucchini brownies with a few healthier ingredients.

Once late summer hits there are zucchini recipes all over the place.  Zucchini is the one thing that grows like made in my garden, and I am sure I am not the only one. So everyone is looking for fun new ways to use it up.  More than Zucchini Bread.

Well, zucchini brownies might just be my new favorite. Chocolate zucchini cake is right up there, but brownies will always have my heart. Homemade Brownies are pretty much my favorite thing ever. So it is no surprise I like brownies over cake when it comes to zucchini either.

One thing I tried to do was make these zucchini brownies a little healthier.  Kind of like my Whole Wheat Chocolate Chip Cookies. These brownies still have sugar and oil in them, but it is coconut oil and coconut sugar.  Coconut oil is believed to be a healthier fat for your body than vegetable oils.

Coconut sugar is a natural sugar made from an actual coconut plant.  It still retains some of the vitamins and minerals from the coconut.  I also used white whole wheat flour, so they have whole grains too!  What more can you ask for out of a dessert?  Honestly, you would never know any of these healthier ingredients are in there.  They taste like a rich, fudgy, and chocolatey brownie.

I am a sucker for brownies, they are pretty much my favorite dessert ever. Peanut Butter Stuffed Brownies are the ultimate in chocolate desserts. So I am kind of picky when it comes to brownies. If I can taste anything off or notice a difference, I am out. But these are so good.

You would seriously never know there is zucchini in there and that they are made with better for you ingredients.  You can see the green flecks in the brownies, but if you peel your zucchini, that will fix that. Try these on your biggest skeptic and you will win them over for sure!

So if you are looking for some new zucchini recipes to try this year, look no further. You will use up some of the zucchini from your garden and be so happy with the results. And you can get just couple extra veggies in your kids without them knowing.  That is a win in my book!

Zucchini Brownies - Fudgy zucchini brownies with a few healthier ingredients.

Healthy(er) Zucchini Brownies

Fudgy zucchini brownies with a few healthier ingredients

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 1 1/2 cups coconut sugar, (or brown sugar)
  • 2/3 cup coconut oil, , melted (or vegetable oil)
  • 2 tsp vanilla
  • 1 3/4 cup white whole wheat flour
  • 1/2 cup cocoa powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups shredded zucchini, (do not drain)
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees, Spray an 8x11 inch baking pan with nonstick spray.
  2. In a large bowl mix together sugar, oil, vanilla, flour, cocoa powder, salt and baking soda. The mixture will be very dry. Add the zucchini, and stir until well combined. It will take a minute or two, but it will get to the consistency or traditional brownie batter. Stir in 1/2 of the chocolate chips.
  3. Pour batter into prepared pan. Sprinkle the remaining chocolate chips over the top.
  4. Bake for 20-25 minutes or until a tester comes out mainly clean. Be careful not to over bake.
  5. Let cool completely before serving.

This solves a problem at my house! It gives me a healthier treat option AND uses some of this zucchini I have coming out of my ears!
