What do you eat for breakfast during the week?  Breakfast is really not my favorite meal, so I struggle almost every day.  I get bored easily too, so even when I do find something I like, I can only go a few days before I want to switch it up.  English muffins with peanut butter, Mint Cliff Bars, and a protein shake are about the 3 things I rotate between.  I am relatively new to liking yogurt, so recently I started adding yogurt and granola into the mix.  So if you have any great quick and easy ideas that are still good for you, let me know!

We eat a lot of granola in our house.  Yogurt with fruit and granola is one of my son’s favorite breakfasts.  He often times comes home from school and wants yogurt and granola for his afternoon snack too.  Most of the time I just buy it from the store, but I decided it was time I mixed it up and made it at home.  I am pretty sure I need to do this more often.  It was so easy, and I got to put all of our favorites in it.  With homemade granola you can easily switch up the flavors to whatever you are craving at the time.  In this recipe I used pecans and pumpkin seeds.  Then after the granola cooled I mixed in some dried cranberries and a few chocolate chips.  Perfect on top of yogurt or with milk for breakfast.

Homemade granola really could not be easier to make.  You mix all of the wet ingredients together in a bowl, and just pour over your oats and nuts.  Then you just bake it to dry it out a little, and you are done.  This recipe makes a pretty big batch too, so you can have it on hand for about two weeks.  I love it for quick breakfasts, or even to just grab a handful when you need a quick snack.  I see a lot more flavor combinations in our future!
