We are just days away from Thanksgiving.  I trust that most people have their menus set at this point.  So I am switching gears and giving you a leftover idea.  These turkey and stuffing meatballs are the perfect thing to do with your leftover stuffing.  I can only take so many sandwiches before I am over leftovers, so I need to switch it up.  And these meatballs are just the thing to do that.  Meagan from A Zesty Bite did a version of these that got me thinking.  So I got to work and came up with my own idea.  And if you want a sweet thing to do with some leftovers, be sure to check out these Sweet Potato Cupcakes!

I look forward to Thanksgiving all year.  There is just something about the tradition of having the same meal, gathering with family, and spending time in the kitchen that I love.  I don’t often host Thanksgiving, because of where we live, so I don’t get to take advantage of a lot of the leftovers. I usually get to have 1 or 2 sandwiches the next day, and that is about it.  So this year, I decided to start early.   I made Southwest Cornbread Stuffing months ago, so we got to enjoy those.  Then I made a classic Thanksgiving Stuffing a few days ago, so I could test out these meatballs.

My 9 year old thought these were the best meatballs ever!  He has asked that I make them at least twice since.  It is not every day that you have leftover stuffing sitting around, so unfortunately he hasn’t gotten his wish.  I am going to have to make these year round using store bought instant stuffing though, because they were really good.  The stuffing gives the meatballs all the flavor that need.  Then you can dip them in leftover gravy or cranberry sauce.  Definitely a keeper and a recipe that needs to be tried later this week!

Leftover Turkey and Stuffing Meatballs

Leftover

Turn leftover stuffing into turkey and stuffing meatballs. Quick, easy, and great the next day. Dip in leftover gravy or cranberry sauce!

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 1 pound ground turkey
  • 2 cups leftover stuffing/dressing
  • 1 egg
  • 1 Tbls olive oil

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl mix together turkey, stuffing, and egg. Mix until well combined.
  3. Roll into 1 inch meatballs.
  4. Heat oil in a skillet over medium high heat. Add meatballs, and brown slightly.
  5. Remove and place on a baking sheet. Bake for 10-15 minutes until the meatballs are cooked through.
  6. Serve with gravy or cranberry sauce for dipping
