Are you ready for the holiday baking season? It is pretty much upon us.  I have to admit, I am not quite ready.  This year has just gone by far too quickly, I want it to slow down a little!  But today, I am here with a special treat for you.  I have mentioned Katrina from In Katrina’s Kitchen before.  She is one of my very dear friends in this blogging world.  We were roommates at a conference earlier this year, and I was able to visit her when I was in Ohio a few weeks ago.  So this post is kind of special to me today.  In case you didn’t know Katrina came out with a cookbook (The Biscoff Cookie & Spread Cookbook)!!!  She worked so hard on this book, and it is gorgeous and so full of great recipes.

Win a copy of The Biscoff Cookie & Spread Cookbook

I pre-ordered my copy of this book a few months ago, but then Katrina asked if her publisher could send me a copy for review.  Obviously, my answer was yes.  So now I have 2 copies, and I know one lucky friend who is getting one as a gift.  Katrina has 2 sons, one of them has a severe peanut allergy.  So she turned to Biscoff spread as a peanut butter alternative to her recipes, so that her whole family could eat them.  In case you haven’t had Biscoff spread before, it is kind of like a gingerbread in a spread form.  It is a little more mild than a gingerbread, but it has that same hint of spices in there.  You will be eating it with a spoon, straight from the jar the first time you try it.  And maybe every time after that.  The stuff is so good, and addicting!

No Bake Biscoff Bars {Dinners, Dishes, and Desserts}

If you have ever visited In Katrina’s Kitchen you know just how darn creative she is.  Well, this book is a perfect reflection of her and her blog.  The pictures are gorgeous, the recipes are super creative, yet use every day ingredients and are easy enough for the novice baker.  Everything from Biscoff cinnamon rolls, to cupcakes and cookies to waffles, pancakes, cheesecake, bread, muffins and more.  I seriously can not say enough good things about this book.  I want to make just about every recipe!  My holiday baking tray is going to be covered in Biscoff everything this year!

No Bake Biscoff Bars are super easy and a perfect treat for your holidays.

No Bake Peanut Butter Bars are one of my all time favorite treats.  So I was immediately drawn to the Biscoff version.  It was the first recipe I tried, and it definitely lived up to my expectations.  My 9 year old tried to hide the last one, so that he could have it to himself.  So, if you are looking for a gift for your favorite baker this Christmas, definitely pick up a copy of this book!  And, be sure to check out the Today Show so you can see Katrina in action!  The Today show went to Katrina’s last week and did a segment on her book, and some of her recipes.  The segment will be airing sometime in December.  So be sure to watch!

I really wanted to love these bars, but the end result was disappointing. I followed the recipe 100% and my bars looked exactly like the photo.I think the misstep was the powdered sugar in the recipe. They are extremely sweet almost not edible. The flavor of the powdered sugar takes over and taints the delicious flavor of the Biscoff. The texture is crumbly, crystallized sugar not soft and creamy like a peanut butter cup which is what I was expecting. This recipe is a waste of Biscoff which tastes so much butter straight out of the jar. I like the idea of Biscoff Bars, but this recipe needs to be reinvented.

I am sorry this recipe didn't work out for you. I took it straight out of a cookbook that I know was tested many times. My husbands co-workers and my family all loved the recipe. If it was too sweet for you, maybe you could reduce the sugar next time to come up with something more to your liking. Thanks!

Hi! Question-- do you measure the cookies, then crush them, or crush them first then measure 2 cups? Approximately how many cookies do you need? Thanks!

Natalie - It is pretty much the whole package of Biscoff Cookies. I measured after they were crushed though. Enjoy!

I agree - this year went by WAY too fast. Scary! I love easy treats like this to bake for the holidays. I'm keeping it simple this year! Biscoff is my fave :)
