Cajun Sausage Pasta

Cajun Sausage Pasta is a great way to spice up your weeknights!  One pan, 25 minutes, and you have dinner on the table! Creamy pasta with lots of Cajun flavors and your favorite sausage.

Getting dinner on the table each weeknight can be a chore. Coming up with what to make each night just never ends! So I love having a few recipes that I can just turn any night of the week when I don’t have anything planned. And when it uses only 1 pan and is ready in 20 minutes that is even better!

My family loves Cajun flavors, so this is one of the most requested dinners in my house.

This Cajun Sausage Pasta is full of Cajun flavors with both seasoning and using Andouille sausage. You can really use any smoked sausage you like, but to up the flavors and make this really come to life I like to use spicy andouille sausage.

  • Short Cut Pasta
  • Andouille Sausage
  • Onions
  • Garlic
  • Chicken Broth
  • Heavy Cream
  • Milk
  • Parmesan Cheese
  • Cajun Seasoning
  • Green Onions

How To Make Cajun Pasta

  1. In a large skillet brown the sliced sausage and onions together for about 5 minutes, until the onions are soft and the sausage is browed.
  2. Mix in the garlic and cook for 1 minute until you can just start to smell it.
  3. Add in the pasta, chicken broth, heavy cream, milk, Parmesan cheese and Cajun seasoning. Stir until it is all combined and bring the mixture to a boil. Reduce the heat, cover and cook for about 10 minutes until the pasta is fully cooked.
  4. Once the pasta is tender and most of the liquid is absorbed, remove from the heat and taste to see if you want to add more Cajun seasoning. Start with small because it does make the mixture spicy. Sprinkle with green onions to serve.

Can I Use Different Sausage

Yes, absolutely. You can use any smoked sausage, even turkey sausage for this recipe if you want to cut down on fat and calories more. I like Andouille sausage for the Cajun flavors, but you can use any sausage you have.

What Pasta To Use

You can use any shortcut pasta for this recipe. Rotini, Penne, Bowtie, Cavatappi etc. I like to use short cut pasta, so you can serve it easily and get a little bit in each bite with the sausage.

Why Milk and Heavy Cream

I get this question quite often on recipes, and the reason is to cut down on fat and calories. I still want the pasta to be rich and creamy, but I don’t want to feel too bad about eating it. So I like to do half heavy cream and then usually half skim milk. You can use all heavy cream, use actual half n’ half, or even whole milk if you want.

Storage

This one pan dinner is ready in about 20 minutes and makes a great weeknight meal. Even with just a couple of us, I love to make the full recipe to have lunches for the next couple of days. Store in an air tight container in the fridge for 4-5 days.

One Pot Cajun Pasta

Total Time 25 minutes

Ingredients

  • 1 pound Andouille Sausage or your favorite smoked sausage
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 pound short cut pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup Parmesan Cheese
  • 1-2 tablespoons Cajun Seasoning

Instructions

    1. In a large skillet, over medium high heat, brown sausage and onion together for 5 minutes; until sausage is browned and onions are tender. Add garlic and cook for 1 minute until fragrant.
    2. Add pasta, chicken broth, heavy cream, milk, parmesan cheese, and Cajun seasoning to the pan. Stir until well combined.
    3. Bring to a boil, cover and reduce to a simmer. Cook for 10 minutes until the pasta is cooked, stirring occasionally.
    4. Adjust the Cajun seasoning to your desired heat level.
    5. Serve immediately.

I made this the first time and it was PERFECT. The last few times it just hasn’t thickened up. What could I be doing wrong?

Did you change the milk product that you used, or maybe the shape or brand or type of pasta? Some pasta shapes take on a little less liquid, and the chickpea and other alternative ones can act a little different. Also if you are using whole milk or something other than heavy cream, it might not thicken the same. You could also try adding a little more Parmesan cheese to help if necessary.

Yes you can, it just will not thicken up and be quite and thick and creamy.

I made this for dinner tonight and it was delicious! It was also very quick and easy for a busy evening. I used up items in the fridge and pantry which is always a win. I added an orange bell pepper along with the onion. I only made half the recipe and served with a salad and slice of garlic bread and there's enough pasta for the 2 of us to eat another meal. Thanks very much for the grat recipe!
