We are supposed to get snow today.  I realize we are almost to mid November, but I am still not really OK with this.  I am a wimp when it comes to winter, and snow is at the top of the list for things I don’t like.  They threatened last week that rain would turn to snow over night, but it never happened.  Then it was in the upper 60’s for a few more days.  So I am hoping they are wrong this time as well.  The only good thing about Colorado snow, is it melts quickly.  We hardly ever have snow on the ground for more than a week.  But before Thanksgiving is too early for me!

Potstickers Asian Chopped Salad {Dinners, Dishes, and Desserts}

I am pretty sure that everyone knows salads are good for you. But sometimes they can get boring.  A chopped salad is my favorite kind to make or order in a restaurant.  Everything is the right size, and you can get everything on your fork for one bite.  And I kind of a soft spot for anything that has an Asian dressing. So I decided to turn the chop salad upside down today and add Potstickers.  How fun is that?!  I used Ling-Ling Chicken and Vegetable Potstickers, and used the sauce packet to make the dressing super quick and easy.  Totally ups your salad game. Authentic Asian flavors in your kitchen, even on your busiest day.

The thing that is so easy about chopped salads, is you can put whatever you want on them.  I took a short cut and used packaged cole slaw mix for this.  But you could chop up a head of cabbage if you have one.  I kept the toppings pretty minimal, because I am kind of obsessed with potstickers and wanted those to shine.  So I just used cilantro, green onions, and almonds.  But you could add edamame, bell peppers, cucumbers, or whatever other ingredients you like!  The dressing comes together in seconds because I used the sauce packet from the potstickers.  All the flavors you need, right there! So mix up your salad this week and try this Potstickers Asian Chopped Salad.  I promise you will not be disappointed.

Potstickers Asian Chopped Salad

Potstickers Asian Chopped Salad - A chopped salad topped with potstickers and an Asian peanut dressing. A fun twist on an Asian Chopped Salad!

Cook Time 10 minutes
Total Time 15 minutes

Ingredients

Salad

  • 6 Ling Ling Chicken & Vegetable Pot stickers, (cooked according to the package directions)
  • 4 cups coleslaw mix
  • 3 Tbsp cilantro, finely chopped
  • 1/4 cup sliced almonds
  • 1/4 cup sliced green onions

Dressing

  • 1 packet sauce from Pot stickers
  • 1 Tbsp olive oil
  • 1 Tbsp peanut butter
  • 2 tsp soy sauce

Instructions

  1. To assemble the salad divide the coleslaw, cilantro, almonds and green onions into 2 bowls. Top with 3 potstickers each.
  2. To make the dressing mix all of the ingredients together until well blended. Pour over the salads.
  3. Serve immediately

I would never think to put potstickers in a salad! Do you let them cool off first or do they go on the salad warm?

I put them in warm, but I always put meat on my salads warm. Such a fun twist, and great texture mix up.
