Pumpkin Rice Krispie Treats – These are the perfect no bake fall treat. Rice Krispie treats loaded with pumpkin and pumpkin pie spice for the ultimate dessert!

Rice Krispie Treats are probably one of my husbands top favorite desserts. There are so many different ways to mix them up; Biscoff Rice Krispie Treats and Peanut Butter Butterscotch Krispie Treats are some of our favorites.

But as soon as the fall hits, I am all about anything pumpkin or apple. These Pumpkin Rice Krispie Treats are a must make if you like pumpkin!

What You’ll Need

  • Rice Krispie Treats
  • Pumpkin Puree
  • Butter
  • Marshmallows
  • Pumpkin Pie Spice
  • Vanilla Extract
  • White Chocolate

I like to use the Pumpkin Mellowcreme candies on top of these krispie treats, so people know they are pumpkin and fall favored. But they are definitely optional.

If you don’t have pumpkin pie spice in your pantry, don’t worry. You can make Homemade Pumpkin Pie Spice in just minutes and have it on hand for all your fall baking.

How To Make Pumpkin Rice Krispie Treats

  1. Place two layers of paper towels on a small plate. Spread the pumpkin over the paper towel and let it drain for 10 minutes.
  2. You can use a saucepan or the microwave for melting, I like to use a large microwave safe bowl to make it quick and easy. Add marshmallows and cubes of butter to the bowl and heat for 45 seconds.
  3. Remove from the microwave and stir. Add in pumpkin and mix until everything is melted. Return to the microwave for 30 more seconds if needed.
  4. Stir in vanilla extract and pumpkin pie seasoning until everything is smooth and well combined.
  5. Fold in cereal until gooey and well coated.
  6. Pour into prepared pan and let set for a couple hours.
  7. Drizzle melted white chocolate over the top and top with candy pumpkins if using.

Recipe Tips

  • Make them even more orange! Want them to scream pumpkin? Add a few drops of orange food coloring to the melted marshmallows before you mix in the cereal.
  • Play with the shape. These are obviously just your average square bars, but you can get creative with these. A lot of people like to shape them into balls so they actually look like pumpkins, Use a Rolo candy or part of a pretzel to make the stem. Spray a little non-stick spray on your hands, to make this easier.
  • Don’t skip drying the pumpkin! If your pumpkin has too much liquid in it, the bars will be a little mushy or soggy. So take the time and let it drain for 10 minutes.
  • Depending on how thick you like your bars, you can use almost any sized pan for these. I almost always use an 11×7 inch pan, so they are on the thicker side. But you can use a 13×9 or even a 9×9 inch pan. They all work really well.

Ingredients

  • 6 cups Rice Krispie cereal
  • 1/4 cup pumpkin puree
  • 4 Tablespoons butter, cut into cubes
  • 10 oz marshmallows
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup white chocolate, melted
  • Pumpkin Mellowcreme candy

Instructions

  2. Spray a baking pan with non-stick spray and set aside. You can use 13x9, 11x7 or 9x9 depending on how thick you want your bars.
  3. Add marshmallows and cubes of butter to a large microwave safe bowl and heat for 45 seconds.
  4. Remove from the microwave and stir. Add in pumpkin and mix until everything is melted. Return to the microwave for 30 more seconds if needed.
  5. Stir in vanilla extract and pumpkin pie seasoning until everything is smooth and well combined.
