I can’t believe that Thanksgiving is right around the corner!  October was over in about 2 days, so I can only imagine how quickly November is going to fly by.  I am headed out of town tomorrow for a conference, so this week has been a little crazy around here.  Hard to believe when I get back I will have less than 2 weeks until my parents get here, and then it is time to actually have Thanksgiving.  Plus my son has his regional Lego Robotics competition in a couple weeks, so getting them ready for that is going to be a lot of extra meetings!

So is your November as crazy as mine?  Given I only have 1 child, I am pretty sure you probably said yes.  I am hosting Thanksgiving this year for my parents and my brother and his wife.  There will be plenty of help in the kitchen the day of, but I also don’t want to spend all day cooking.  So I am going to see how much work I can get done ahead of time.  And this Pumpkin Ice Cream Pie is one of those ways!  I am working with Cold Stone Creamery this November to share their Pumpkin Ice Cream Pie with you.  And trust me, you want to know about this pie!

My 10 year old is kind of obsessed with all things pumpkin.  And pumpkin ice cream is his latest discovery.  When I went to my local Cold Stony Creamery store to pick up this pie, I took my son with me.  He HAD to try the Pumpkin Pie in the Sky creation.  It has the same creamy pumpkin ice cream the pie does, but it also has pieces of graham cracker crust, whipped topping and caramel mixed in.  Pretty sure I got lots of mom points for the after school snack that day!

The Pumpkin Ice Cream Pie is in stores now until November 26th. Go to http://coldstonecakes.com, or head to the store to pick yours up right away.   It has all the flavors of a traditional pumpkin pie, but it is ice cream!  And that means, you can throw it in your freezer and just bring it out to serve.  The pie is topped with a cinnamon frosting and chocolate leaves, and looks gorgeous.  Your guests will be impressed, and it is one less thing you will have to think about baking!
