About ME
Hi! I’m Erin. Welcome to Dinners, Dishes, and Desserts. I really appreciate that you are here. I am not good at telling about myself, but here it goes!I am a wife and a mother. I have been married for almost 11 years to a wonderful husband. We actually met in high school. Currently our parents live across the street from each other
Our son is 7 years old. He is very much into sports right now. Doesn’t really matter which one, as long as there is a ball involved. When he isn’t playing outside, he loves to read.
I grew up in the Mid-west. I have lived in Minnesota, Wisconsin and Iowa. Now we are living in Colorado, and loving it. We absolutely love the mountains. We enjoy hiking in the summer, snow shoeing in the winter, and everything in between! We have always wanted to live in Colorado, so this is a dream come true.
I am not a chef, and will never claim to be. I went to school for finance, but after our son was born I stayed home. I use this blog to share my own recipes, and branch out to try new things. I get bored easily, so I am constantly trying new things. I make anything from dessert to snacks to drinks to main dishes. You name it, I will give it a shot.
This has become so much more than I ever thought it would. I hope you have a look around, and find something that you and your family will enjoy.

I've just tried quinoa this year, too…and found the red took longer to cook than the regular. I think I like it best as a cold salad with fruits, nuts and a vinaigrette…but I have lots left to play with, too. I grew up in Ames…nice to find another blogger from Iowa
Hey at least the pork chops were good, right?
Don't give up on it, yet… I'm with Lizzy… throw in some dried fruits, nuts, and some vinaigrette, and have a go.
I think the correct ratio for quinoa is 2 cups of water for each 1 cup of quinoa…it always works for me!

Erin, I just love reading your blog! I make a quinoa tabouleh salad that we love. I just use quinoa of any color, and mix in sliced carrots, green onions, tomatoes, chopped parsley, and cucumbers; then mix 1/2 fresh lemon juice and 1/2 olive oil (how ever much you need for the salad) and mix it in. It's a great summer salad

I love Spotted Cow too!! You can only get it in WI they do not export to any other state. I am originally from WI, and my parents and in-laws both still live there. When they visit, they always bring some for me
