Shrimp Scampi

Shrimp Scampi – juicy shrimp sauteed in a garlic butter sauce with a hint of white wine and lemon. Ready in about 15 minutes, so perfect for entertaining or a busy weeknight.

Shrimp scampi is one of those dishes that sounds hard to make. You see it on restaurant menus and just assume it is going to be difficult to do at home. But trust me, it is not! It is really just shrimp that is cooked in garlic butter.

And can you really go wrong with butter and garlic involved?

Why This Recipe Works

  • Shrimp cooks in about 10 minutes, so this is one of those super fast recipes you can make in minutes on a busy weeknight.
  • Stock up when shrimp is on sale. Shrimp seems to go on sale regularly, and it lasts a long time in the freezer, so buy a couple of bags and have it on hand.
  • Shrimp is very low in calories and high in protein. So by itself, it is a very nutritious option. Helps out weigh the butter in the recipe. You can adjust the amount of butter if you want to cut down on some of the calories.

What You’ll Need

  • Large or Jumbo Shrimp
  • Olive Oil
  • Butter
  • Garlic
  • White Wine
  • Salt & Pepper
  • Parsley
  • Lemon Juice

Shrimp Scampi Without Wine

There isn’t a lot called for in this recipe, but if you don’t have wine or just don’t want to cook with it, you can leave it out or use chicken broth in its place. Some studies show that not all of the alcohol completely cooks out in a recipe, so if you don’t want to use it, you definitely don’t have to.

How To Make Shrimp Scampi

  1. In a large skillet heat the olive oil and butter together over a medium high heat. Once it is melted, add the garlic and cook for a minute or two.
  2. Season the shrimp with salt and pepper and add it to the skillet. Cook for about 2 minutes and then flip to the other side.
  3. Pour in the wine, and let it simmer for a couple of minutes, until the wine has reduced by about half, and the shrimp is pink and cooked through.
  4. Remove from the heat, stir in lemon juice and sprinkle with parsley.

Recipe Tips

  • This is one of those recipes where you want to have everything prepped and measured before you start cooking. Shrimp cook very fast, so you don’t want to be chopping parsley and over cook them.
  • I like to use large or jumbo shrimp for this recipe. The larger the shrimp, the better I think they taste. But you really can use any size and it will work great.
  • If you are using the white wine in this recipe, pick a dry white wine that you like drinking. It does not have to be expensive, just something you like the taste of. Something like a Chardonnay or Sauvignon Blanc work well.

  • 1 pound large shrimp, peeled and deveined
  • 3 Tablespoons butter
  • 2 Tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup dry white wine
  • 2 Tablespoons chopped fresh parsley
  • 2 teaspoons lemon juice
  • Salt & Pepper
