Strawberry Cheesecake Lasagna – You love lasagna as a main dish, so why not serve it for dessert too? Layers of fresh strawberries, sweet cream, and graham crackers are stacked high in this no-bake sweet treat. 

Lasagna is typically a dish that is made of pasta and cheese with a red sauce. It is all layered together and baked until perfection. Well this dessert gets it name because of the layers, but that is where the similarities end. It is a dessert that doesn’t even involve the oven!

I love no bake desserts when the weather gets warm, and this is such a great one. This No Bake Lemon Cheesecake is also a show stopper, so if you are a fan of lemon, don’t miss it!

Ice Box Cake

I first learned about ice box cakes a couple years ago, and I have not turned back since. Strawberry ice box cake is definitely one of my family’s favorite summer desserts. It is light and refreshing.  You can mix up the cracker that you use, the filling, and just about everything about it, to make your own unique version every time.

What You’ll Need

  • Cream Cheese
  • Granulated Sugar
  • Heavy Whipping Cream
  • Powdered Sugar
  • Vanilla Extract
  • Graham Crackers
  • Strawberries

In case you aren’t familiar with an ice box cake, the concept is very simple. You put a layer of graham crackers in a pan. Cover it with whipped cream or pudding. Then you just stack and repeat the layers. The dessert sits in the fridge for a few hours before you serve it.

How To Make Strawberry Cheesecake Lasagna

  1. The first thing you want to do is beat the cream cheese and sugar together until it is super creamy and smooth.
  2. Next you make whipped cream by whipping the heavy cream with the powdered sugar and vanilla until you get stiff peaks, This is done best with an electric stand mixer to save time and your strength.
  3. Gently fold the 2 mixtures together until they are combined. Be careful not to deflate the whipped cream too much.
  4. In a 13x inch baking sheet place a layer of graham crackers along the bottom. Spread half of the cream mixture over the top and then half of the chopped strawberries. Repeat with the rest of the ingredients.
  5. Then you just cover and place in the fridge for 4-5 hours for it to set up.

The fridge is where the magic happens. The pudding or whipped cream softens the crackers, and it tastes like cake. Like a real cake! To make things even better, today we are having a strawberry cheesecake version!

The cheesecake layer is made of homemade whipped cream and cream cheese! Then you use super fresh and juicy strawberries. This strawberry cheesecake lasagna is the perfect summer time dessert. I see it for Memorial Day in our future.

The strawberries I used were juicy enough, so I did not need to add any sugar to them. But if yours are not, stir in a couple tablespoons of sugar and let them sit for 20 minutes. You want all that juice to make this extra yummy!

Can I substitute stevia for regular sugar and is there any substitute for powdered sugar. Trying to make for diabetic

I am not familiar with sugar substitutes and haven't tried it with them. I assume it would work with whatever you normally substitute in recipes, I just haven't tried any.
