Sugar Cookie Chex Mix

Christmas is only a few days away.  Are you ready?  Do you still have a couple people you need to finish getting gifts for?  Well, today I have exactly what you need.  Something sweet, pretty, and ready in 15 minutes.  You really can’t ask for anything else, can you?

The other weekend I had the opportunity to go to an event with the Chex Party Mix.  The Chex Party Mix team was set up in a mall in Denver.  They invited a group of local bloggers to come see what they were all about.  I was excited to see what they had in store for us.  There was probably about 20 bloggers that showed up.  We were divided into groups and put to work!  First up, I got to have my hand at making this sugar cookie Chex mix.  It was so easy to make, and we were done in less than 15 minutes even with all the chatting 🙂  Next my group moved over and had the chance to make Pumpkin Pie Crunch Chex Mix.  Again, super easy and so fun!

The Chex team had a couple tables set up, stocked with everything we needed to package up the treats.  Pretty bags, tons of ribbons, gift tags, bows, and everything you could think of.  This craft impaired girl was a little nervous.  But they made it easy.  Cellophane bags with a pattern, a matching ribbon, and you were done. What a relief to end up with a pretty package without a lot of hassle.  I spent the afternoon with my sister in-law, so I gave her one of the packages.  It was a nice surprise to be able to show up with a gift.

Once we had packaged up all the treats, and there were a lot of treats, it was time to go.  The Chex Mix team was set up for the day, and they were going to be making party mix for all the mall goers that day.  I can’t even imagine how many batches they went through.  People were lining up already, while we were still there!  Chex party mix really is a hit with people of all ages.  One batch makes enough for lots of gifts, or you can just keep a few for yourself….I won’t tell.  For lots of other varieties go to Chex Party Mix.

Sugar Cookie Chex Mix

A classic sugar cookie turned into a fun Chex party mix

Cook Time 15 minutes
Total Time 15 minutes

Ingredients

  • 6 cups Rice Chex cereal
  • 1/4 cup butter
  • 2 Tbls corn syrup
  • 1/4 cup sugar
  • 2 tsp vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup white chocolate chips
  • 2 tsp sprinkles

Instructions

  1. Pour cereal into a large microwavable bowl.
  2. In a 2 cup microwavable measuring cup heat butter until melted. Add sugar and corn syrup. Heat for 30 seconds, stir until smooth. Add vanilla.
  3. Pour over cereal, and mix to coat. Add white chocolate chips, and stir.
  4. Heat for 2 minutes, stirring after 1 minutes.
  5. Sprinkle with powdered sugar and mix.
  6. Pour on a lined baking sheet to cool. Sprinkle immediately with colored sprinkles.

This is the first time I'm seeing a recipe for a sugar cookie flavor....LOVE it! Can't wait to try!

I think there is a 1/4 cup of sugar missing in the above recipe. The box of Chex calls for it. Just a heads up.
