French Onion Dip is one of my favorite dips.  I could eat it almost every day.  I like the full fat stuff too, not the Lite.  So it is very rare treat for me.  My husband and son on the other hand like the Lite stuff, and eat it with pretzels quite often.  A couple years ago I saw a recipe for caramelized onion dip that was warm and had a crispy bread crumb topping.  I made it a couple times, and it was very good.  But not quite what I was looking for.  So recently I decided to try again, and this onion dip is now a new favorite.

I am so excited for today’s post.  My friend Tony is helping me out today.  Tony is not a blogger, he is an engineer, but he is one heck of a cook.  Tony was my husband’s roommate in college, so we have been friends for a very long time.  And whenever we get together there are certain foods that ALWAYS have to be made.  These Vietnamese Egg rolls are one of them.  Tony’s parents move to the United States from Vietnam before Tony was born.  His parents still speak Vietnamese on a daily basis, and cook food for Vietnam regularly.  It is always so much fun to get together with them and experience new things.  I have never been a big fan of egg rolls, but that is mainly because I don’t like cooked cabbage.  But when Tony made this version for me, I totally changed my mind.  Even my 9 year old asks when we can make Tony’s egg rolls.

Are you ready for the holidays?  Is your tree up?  Is your house decorated?  I can finally say ‘yes’ to some those questions.  But am I ready?  Not even close!  I have no idea what I am going to do for presents.  My husband is nearly impossible to shop for, and I haven’t even started.  And, my son doesn’t seem to want anything exciting for Christmas.  He is very into sports, so a few jerseys from his favorite players and a couple games make up most of his list.  Santa is going to have a tough job with him this year!  On Christmas Eve we always give him a couple small presents to open.  Usually a pair of pajamas and a Christmas ornament.  This year he told me I didn’t need to get him pajamas, because he doesn’t really wear the matching pajama sets anymore.  Seriously?!  When did my 9 year old get so old!

Living in Colorado, all you have heard about for the last week is Peyton Manning.  Leading up to the game on Sunday the talk was all about him beating the record that Brett Favre held.  Now, it is all about how he did break it, and how much farther can he go.  My husband and I were actually in Denver over the weekend, but did not go to the game.  Tickets were obscenely high priced, because everyone wanted to see him break the record.  Everywhere you turned there were Manning signs, and people in Manning jerseys.  On Monday, after he broke the record I was in my son’s school for something.  Every 3rd kid I saw had a Manning or Bronco shirt on.  It is kind of crazy!  Hoping that it dies down a little bit in the next couple weeks.

We are knee deep in football season.  I don’t mind watching football, as long as it is one of a couple teams I care about.  As for the rest of the games, I have no interest.  My husband and son could watch every game all weekend long, and be happy.  They remember all the players, the stats, and could watch it all day.  For me, the only way to cope with that is to have some snacks.  And good snacks at that.  This is where Philly Cheesesteak Dip comes in.  All the taste of one of my favorite sandwiches, in a dip form.  Really, can you get any better than that?

Idaho Nachos - waffle fries, bacon, and cheese!

I am usually the one in the family that manages to hurt myself.  I run into the coffee table that has always been there, I trip over things, stumble down the steps etc.  I am known to be rather clumsy.  Well, for once I am not the one to hurt myself.  My husband went on a work outing the other day, where they went hiking up in the Poudre Canyon.  I think it was about  6 1/2 mile hike, and with about 3 miles to go, he rolled his ankle.  There was no choice, he was in the middle of no where on a trail, 3 miles from the road, he had to continue.  Needless to say, by the time he made it home (after the team went out to lunch and he went to work for an hour) his ankle was very swollen and painful.  After lots of ice and ibuprofen he is starting to get better.  But it will be a little while before he is back to hiking and biking like he wants to be.

As you may remember I was in New York last week to attend an event.  I got to visit the Pepperidge Farm headquarters, as the winner of a contest hosted on Recipe Girl.  I will share some of my trip tomorrow as part of Thursday Things, but I have to share this recipe with you first.  As part of the event, they had a small cooking competition.  Lori and I were the winners, and were crowned the Puff Pastry Queens for the day.  After sharing on Instagram, lots of people requested the recipe, so as soon as I got home, I recreated it.  Our dessert was amazing too, Lori posted the Raspberry Mango Dessert Bruschetta recipe here!
