Summer time is the time of entertaining. It seems that almost every weekend someone is having a get together, and you are bringing a dish to share. I love getting to hang out with friends, relax, and enjoy good food. But sometimes, I struggle with what to bring. I don’t want to bring the same thing all of the time, so I try to mix it up. Plus, I want it to be quick and easy! I know, I am kind of picky aren’t I?
I am usually the one in the family that manages to hurt myself. I run into the coffee table that has always been there, I trip over things, stumble down the steps etc. I am known to be rather clumsy. Well, for once I am not the one to hurt myself. My husband went on a work outing the other day, where they went hiking up in the Poudre Canyon. I think it was about 6 1/2 mile hike, and with about 3 miles to go, he rolled his ankle. There was no choice, he was in the middle of no where on a trail, 3 miles from the road, he had to continue. Needless to say, by the time he made it home (after the team went out to lunch and he went to work for an hour) his ankle was very swollen and painful. After lots of ice and ibuprofen he is starting to get better. But it will be a little while before he is back to hiking and biking like he wants to be.
As you may remember I was in New York last week to attend an event. I got to visit the Pepperidge Farm headquarters, as the winner of a contest hosted on Recipe Girl. I will share some of my trip tomorrow as part of Thursday Things, but I have to share this recipe with you first. As part of the event, they had a small cooking competition. Lori and I were the winners, and were crowned the Puff Pastry Queens for the day. After sharing on Instagram, lots of people requested the recipe, so as soon as I got home, I recreated it. Our dessert was amazing too, Lori posted the Raspberry Mango Dessert Bruschetta recipe here!
I trust that all the mom’s out there had a wonderful Mother’s Day. We had a very relaxing day here. After being gone for three days last week, it was nice to be able to just sit and spend time with my guys. Not to mention we had a freak snow storm come through, so our options were limited. Thankfully, none of the snow stuck to the roads, so it should be gone by Tuesday. My husband planned a fun outing of riding our bikes to a French bakery in town, but guess we will have to do that another weekend. Maybe I will just steal that idea for Father’s Day
Hot dogs are kind of a classic sporting event staple. Whether you go to a football game or a baseball game, there are always hot dogs. Another thing that is always there? Big soft pretzels. So why not combine the two, and have them at your game day event. Or even just a fun dinner on any Sunday.

The holidays are completely upon us, and I think we all have lists that are a mile long, and only a little bit of time to complete them. I think that all of my presents are wrapped, but I still have 2 cookies that I wanted to make. We have family here now, so I am trying to relax and actually enjoy the time together. I mean, what is the good of the holidays if all you do is stress and work like crazy, right?
Do you know what croutes are? According to the French they are a pastry case, or a crust. My husband found this recipe, and requested that I make it. I am not sure he really knew what it was, but he saw it had a sausage filling, and that was enough for him. Turns out they are kind of like a savory hand pie. You can fill them with anything that you want!
Fresh Tomatoes and Basil make the perfect Bruschetta. Great for snacking, light dinner, or an appetizer.
Is your garden exploding with tomatoes right now? Mine is going crazy! We got back from a couple days away, and I picked a big mixing bowl full of tomatoes. There are still tons out there that are almost ready to be picked. Last year when we had lots of tomatoes I made a bruschetta one night, and my husband loved it! I have had bruschetta many times before, and the key is fresh ripe tomatoes.
The Super Bowl is on Sunday, and I have quite the line up for you today! I am having a party, and I am still not sure what I am making. Is that a problem?
So here is the line up: (corresponds to the numbers it the picture above)
1 – Avocado Bruschetta; this is a favorite at my house. Put out a bowl of the avocado mixture, a plate of toasted bread, and let your guests make their own!
2 – Peanut Butter Cookie Dough Brownies; every party needs dessert! These are super fudgy brownies topped with egg free peanut butter cookie dough!
3 – Barbeque Pulled Pork; great thing to put in the crock pot in the morning, and it will be ready when your guests arrive
4 – Spicy Chili-Lime Yogurt Dip; a healthy alternative to other dips. Great with veggies or chips
5 – Fire Roasted Salsa; I can’t watch a big game without salsa! I love the flavor the fire roasted tomatoes give to this quick salsa.
6 – Chicken, Bacon, Avocado Quesadillas; you can make these just before your guest arrive, and leave them in the oven at a low temp so they stay warm. Great for with the salsa.
7 – Artichoke Dip; a warm and guilt free artichoke dip. Dip with veggies or crackers.
8 – Fudgy Brownies; I think that any occasion is a good time for brownies!
9 – Chili; have a big pot of this simmering a way on the stove for people to help them selves. Set up a toppings bar, and you are done!
10 – Philly Cheesesteaks; fun idea to have as a make your own station at your party
11 – M&M Cookies; quick, easy, portable, and fun!
12 – Chicken Club Eggrolls; great finger food, and they are a healthier alternative, because they are baked.
13 – Chipotle Bacon Ranch Dip; spicy ranch dip with bacon, made with Greek yogurt.
14 – Peanut Butter Bars; a quick no bake dessert that is a huge crowd pleaser.
15 – Avocado Hummus; hummus is a great snack, and adding avocado is such a great flavor combination. Plus it is good for you!
16 – Italian Chicken Meatballs; tender, chicken meatballs that you can have in the crock pot during the game.
