
My 7 year old is proving to be opinionated this week. He put his foot down about the No Bake Cookies, and then he wanted something with Blueberries. At first he wasn’t sure what, just something. After a little thought, he was set on waffles. In the past I have bought the frozen variety with blueberries, but figured he was right, it was time to take it up a notch and make my own.

Blueberries are all over the place right now. I am not sure how long the season is, but I assume it has to be ending soon. They are still super cheap at the store though – so go pick some up! This would make the absolute perfect weekend breakfast. The blueberry sauce puts these over the top. I will admit I was a little unsure how the sauce would be, blueberries aren’t my favorite fruit. But it was incredible. I would eat it on just about anything!
You could use your favorite waffle recipe for this, and just fold in the berries. These waffles were light and crispy, but if you have favorite – go for it! My 7 year old ate his with maple syrup, and wouldn’t stop talking about how good they were. It was just him and I for breakfast the day I made these, so I put the leftovers in the freezer. They will be perfect to take out, and toast up for a quick breakfast. If you want to make the Blueberry Sauce, you can go get the recipe from Pinch of Yum. I scaled it back, but followed it exactly.
