Happy Friday!!  So this is the weekend of the Lego Robotics state competition.  The boys did really well at their qualifier in November, and they are excited and ready to show off tomorrow.  They took all the feedback they received at the qualifier and expanded on their project, and added to their robot.  So we will see how things go, but the boys are pretty confident about their team and how they will do. Should be a fun and exciting day!

I can’t believe that Thanksgiving is next week already.  There is so much to do!  I haven’t started grocery shopping yet, have you? My parents get here on Saturday, so my mom will help me get that part organized.  Which is good, because I can not manage to make a complete grocery list and then get everything on the list.  Ever!  I think it is complete, I cross stuff off with a pen, but something is always missed.  It is amazing that people still let me host get togethers.  It is a good thing I always have a well stocked pantry, so we can usually make do.  But you would think I could have this down by now.

I hope that you had a wonderful long weekend. We spent time with friends, relaxed, went hiking, went for a bike ride, got work done around the house, and of course ate some great food!  We smoked some baby back ribs, and they were super tender and amazing. I can not wait for another excuse to make them again. Too bad it is now September and fall is right around the corner.  So it will probably be awhile before they happen again.

My son finally went back to school yesterday.  He loved having so much time off for the holidays, but I was ready for him to go back to school about a week ago.  Last week it was too cold to go outside and play in the snow, so he has been inside and bored.  Now that it is finally warming up again, he is back to school.  Which hopefully means they will get to go outside for recess.  Pretty sure after two weeks of the kids not being at school, they need outdoor recess or the teachers will go insane!

We are just a couple weeks away from Thanksgiving.  Are you ready?  Do you have your menu planned?  We are spending Thanksgiving with our family this year, so I am not in charge of cooking.  We usually have many of the same things though, so I am pretty sure I know exactly what will be on the menu.  I am very much into traditions, but sometimes I like to switch things up.  I am known for always having too much food around, and the holidays are a prime example.  The more side dishes the better!  One thing that will always be on our menu though is Green Bean Casserole.

Happy Halloween!  Are your kids all ready for trick or treating tonight?  My son has his holiday party this afternoon at school, and he is super excited for it.  They have a parade around the school first.  Lots of parents come, and all of the kids in the school parade around the halls of the school and through the gym.  It is fun to go see what all of the kids have come up with for costumes.  There are always a few over the top, super creative kids.  My son is Poseidon this year.  He is not wearing his full costume to school, because I am not sure it will hold up to a party and then trick or treating.  But it should be cute no matter what.

Apparently I am on a Greek kick lately.  Gyros on Friday and this pasta dish today.  I hope that you don’t mind.  Maybe I will have to make some kind of hummus this week to keep the string going…probably not going to happen, but maybe.  I do have a can of chickpeas in my pantry.  I have had it on my to do list forever, to try roasting them as a snack.  Need to get my butt in gear and try that.

Enchilada Pasta Casserole #SundaySupper

A few weeks ago Hurricane Sandy devastated the East coast.  Millions were left without power, countless homes were destroyed and close to 200 people lost their lives.  They are estimating at least $20 billion in damage.  I live in Colorado, so I was fortunate enough not to be directly affect.  But so many people were, and so much help is needed to rebuild. Today the #SundaySupper team is getting together to make “Dishes for Friends in Need”.  Liz from That Skinny Chick Can Bake is hosting this wonderful event.

I am originally from the Mid West, and when you need to bring a dish to a friend, you bring  a casserole.  So that is what I made.  This is an updated version of the casseroles we had as kids.  Spicy, cheesey, full of carbs, and super comforting.  It makes a ton too, and the leftovers are just as good.

If you are looking for ways to help, money is always good.  Organizations can buy so much more than you or I can.  Consider looking into these organizations who are doing great work on the hurricane relief.
