We are just a couple weeks away from Thanksgiving.  Are you ready?  Do you have your menu planned?  We are spending Thanksgiving with our family this year, so I am not in charge of cooking.  We usually have many of the same things though, so I am pretty sure I know exactly what will be on the menu.  I am very much into traditions, but sometimes I like to switch things up.  I am known for always having too much food around, and the holidays are a prime example.  The more side dishes the better!  One thing that will always be on our menu though is Green Bean Casserole.

Happy Halloween!  Are your kids all ready for trick or treating tonight?  My son has his holiday party this afternoon at school, and he is super excited for it.  They have a parade around the school first.  Lots of parents come, and all of the kids in the school parade around the halls of the school and through the gym.  It is fun to go see what all of the kids have come up with for costumes.  There are always a few over the top, super creative kids.  My son is Poseidon this year.  He is not wearing his full costume to school, because I am not sure it will hold up to a party and then trick or treating.  But it should be cute no matter what.

Apparently I am on a Greek kick lately.  Gyros on Friday and this pasta dish today.  I hope that you don’t mind.  Maybe I will have to make some kind of hummus this week to keep the string going…probably not going to happen, but maybe.  I do have a can of chickpeas in my pantry.  I have had it on my to do list forever, to try roasting them as a snack.  Need to get my butt in gear and try that.

A few weeks ago Hurricane Sandy devastated the East coast.  Millions were left without power, countless homes were destroyed and close to 200 people lost their lives.  They are estimating at least $20 billion in damage.  I live in Colorado, so I was fortunate enough not to be directly affect.  But so many people were, and so much help is needed to rebuild. Today the #SundaySupper team is getting together to make “Dishes for Friends in Need”.  Liz from That Skinny Chick Can Bake is hosting this wonderful event.

I am originally from the Mid West, and when you need to bring a dish to a friend, you bring  a casserole.  So that is what I made.  This is an updated version of the casseroles we had as kids.  Spicy, cheesey, full of carbs, and super comforting.  It makes a ton too, and the leftovers are just as good.

If you are looking for ways to help, money is always good.  Organizations can buy so much more than you or I can.  Consider looking into these organizations who are doing great work on the hurricane relief.
