Szechuan Chicken and Noodles

I don’t know about you, but I am always looking for new ideas for dinner.  We eat a lot of chicken, but I try to change it up as much as possible.  Stir fries are an easy way to do that, but even that can get a little old sometimes.  Plus I like it to be good for you, so sometimes that can be limiting.  Not too much cream, or butter, or cheese  – you know the good stuff :)   I gotta save my calories for dessert!

As soon as I saw this recipe, I knew I had to make it.  It was so colorful, full of veggies, and lots of flavor.  And….it is good for you!  It took awhile before I finally got around to making it, but it was worth the wait.  It is a simple, quick, weeknight meal that you can throw together in under 30 minutes.

I used rice noodles that you would make Pad Thai with, because that is what I had.  But really any noodle would work here, vermicelli, spaghetti, lo mein, whatever!  My husband liked to drizzle some hoisin sauce on his.  I tried that with the leftovers, and it really was a nice addition.

Sweet & Spicy Chicken Stir Fry

I hope everyone had a wonderful Labor Day weekend, and was able to enjoy a day off yesterday.  We had a relaxing weekend at home, probably our first one since we have moved.  We did a little around the house, but that was it.  We did manage to go shopping and buy more stuff for our house though, can’t seem to go a day without that happening :)

The one bad thing about having a holiday on a Monday, means the week is shorter and busier.  Stir fry’s are a great quick dinner to help get your week off right.  In about 20 minutes you can have dinner on the table, and a happy family.  The best thing about a stir fry is you can use whatever you have on hand, and whatever you like.  The original recipe called for red bell peppers, I don’t like them, I left them out.

Cooking Light is one of my go to recipe sources, and this is another recipe that does not disappoint.  It has a little heat, a little sweetness, and is a quick and easy dinner.  I have some peas growing in my garden, so I know I will be making this again soon with fresh snap peas.  To add more depth of flavor add in two teaspoons of sesame oil to your rice before serving.  Makes it just a little extra special.

One Skillet Chicken Dinner

Hi friends of Dinner, Dishes and Desserts (or triple D, haha!) It’s Claire, The Realistic Nutritionist here, I’m so happy to be here guest posting while Erin gets her new life in order! I’ve been a fan of her blog for EVER, like since day 1 of blogging for me, so I’m honored to be here today sharing one of my favorite summer dinners, one pot lemon rosemary chicken skillet!


I made this the other day for work and immediately just fell. in. love. It’s so easy, so fresh, and SO healthy, because the last thing we want to worry about is feeling bloaty in our bathing suites, am I right?  OH, and not to mention it’s just a pretty little dinner, wouldn’t you say?


The bright colors of the seasonal vegetables and lemon make this a very appealing plate for your eyes as well as your bellies. Plus, you can change up the vegetables you use to suit your preferences. Hate squash? Don’t use it and sub in something you love instead.


Because isn’t that what life is about, eating stuff we love that makes us feel good? That’s definitely what this dish does to me. Healthy, flavorful and easy. Not to mention, clean up is a breeze! More time for sipping wine on the porch, which is uber important during the summertime, right?

 
One Skillet Chicken Dinner


Serves about 6
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients:
2 large boneless skinless chicken breasts
2 tablespoons olive oil
1 medium onion, chopped
1/2 medium zucchini, thinly sliced
1/2 cup sliced mushrooms
1 large yellow pepper, sliced
2 medium carrots, sliced
Liberal dashes of salt and pepper
1-1/2 tablespoons fresh rosemary
1/4 cup lemon juice
Zest from 1/2 lemon

Thai Green Curry Chicken

Thai Green Curry Chicken

We have a slight disagreement in our house.  My husband and I both really like Thai food and Indian food.  I like Indian over Thai, he likes Thia over Indian.  Considering I am the cook, that means we have Indian more than we have Thai.  I tried to make Pad Thai once, and it just didn’t turn out.  I have figured out what I did wrong, so I just need to try again.  Not sure why I haven’t yet.  So in an effort to be a good wife, I made a Thai Curry.

When we go out for Thai food, we don’t usually get curry.  I always get Pad Thai, I mean always!  My husband tries a couple different things, but they are usually noodle dishes of some sort.  So although, this definitely had lots of Thai flavors, and we both loved it, I am not sure I am off the hook yet.  Must. Make. More. Thai.

I will admit I was slightly nervous about the green curry.  I am weird like that.  If it is a strange color it makes me nervous.  I am used to red curries, so this was a little different for me.  It was perfectly spicy, and the coconut milk gave it great flavor.  We will be making this many more times in the future!
