Reese’s Peanut Butter Cup Sandwich Cookies

What is your favorite cookie?  I have a really hard time narrowing it down, it seems to change often.   In the end, I always fall back to the classic Chocolate Chip Cookie, but it has to be straight out of the oven. I have been making the same recipe since I was a little kid, so that might be part of it.

So last week I gave you Nutella Stuffed Chocolate Chip Cookies.  This week I am bringing you another crazy cookie.  This one is thanks to Shelly at Cookies and Cups.   I mean look at these things!  They are 2 chocolate chip cookies, with a peanut butter cup in the middle.  The peanut butter cup gets all melty, and sticks everything together.  Peanut Butter Cups are pretty much my favorite candy, so adding them to my favorite cookie makes for one insanely good treat!

I surprised my 7 year old with one of these in his lunch.  He came home so excited, and wanting more.  He was very upset to find out I only made a few of them.  But really, if I had more than 5 of these in the house it would not be pretty.  But I do have more cookie dough in the freezer, so I can make them fresh whenever the mood strikes.

Nutella Stuffed Chocolate Chip Cookies

There are so many great fun stuffed cookie recipes out there.  I really want to try so many of them, but I don’t need to gain 20 pounds in the process.  So I got smart!  I made up 1 batch of chocolate chip cookie dough, and made a few cookies of a few different versions.  This was the first one I tried.

I loved the Biscoff Stuffed White Chocolate Chip cookies, so I did a pure chocolate version.  I haven’t made a Nutella recipe in awhile, not sure why that is.  But it is time to change that!  Just because it hasn’t graced this blog in awhile, doesn’t mean it is not in my life.  I even stirred some in Oatmeal Breakfast Cookie the other day, so good!

So anyway, back to these cookies.  I started with the Chocolate Chip Cookie recipe that I have used my entire life.  I put a small amount on the baking tray, filled with some Nutella, and then topped with more dough.  For better instructions you can go to the Biscoff version, I have step by step pictures to help illustrate.  The great thing about these cookies is you can make a couple, and then freeze the rest of the dough.  That way, whenever the mood strikes you are ready to go!  Because let’s face it, warm fresh out of the oven is the best.

Biscoff Caramel Cookie Bars

I know I gave you a dessert yesterday, but this one involves Biscoff, so I am hope that you will forgive me.  Not only is there Biscoff, but it is Biscoff Caramel!  So now, I am pretty sure not only will you forgive me, but you will love me forever.  I can see many possibilities of this in my future.

I made these for a neighbor as a thank you for watering plants while we were on vacation.  When I showed up at his door, his eyes lit up when he saw the plate of treats.  He has a 15 year old son, who had friends over that night.  He glanced over at the boys and said he was pretty sure they were going to be gone that night.

Biscoff Caramel Cookie Bars

These are pretty much your basic chocolate chip cookie, baked into a 13×9 pan.  I split the dough in half, pressed some in, spread the Biscoff caramel over the top, and then covered it with the rest of the cookie dough.  You could easily do this with store bought dough if you wanted.  I think a sugar cookie dough, or maybe a snickerdoodle dough would be amazing.  Maybe half and half?  See I told you I could see possibilities of this in my future :)

Butterfinger Cookie Cups

We had yet another flag football game last night.  I am so torn about the football schedule.  It is about 6 weeks long, but they have 2 practices a week, and then usually 2 games.  Part of me wishes they could space out the games, so it wasn’t so busy.  But on the other hand I am not sure I could do this for 10 weeks!

Yesterday also marked another highlight for me.  My running is back!  Moving to Colorado really hurt my time.  I was 40 seconds per mile slower for the last 4 months.  It has not been fun.  But I am finally back.  My last 2 runs have been back to my pre-move time!  Now I am excited to start adding distance.  I can’t wait to run this summer while visiting my parents in Wisconsin to see what my time will be :)

Ok, so onto the food.  I used Butterfinger mini’s for these, but you could use any mini candy bars.  I don’t know about you, but I still have lots of Easter candy that would be great for these.  Snickers, Twix, Peanut Butter Cups, heck even M&M’s would work.  Want to make it even easier? Use store bought chocolate chip cookie dough.
