We have made it through the first week of school.  So far the year is off to a good start, I think my 9 year old is going to love 4th grade.  To celebrate the end of a great week, my son is having a friend sleep over tonight.  I guess I better get prepared!  A fun dinner and maybe ice cream sundaes need to happen.  Or maybe that is just what girls do?  Or maybe I am just old, and that is what I remember from being a kid?  Either way, guess I better figure it out quickly!

We had the first day of school here yesterday.  For the most part things went well.  It was a little hectic getting out the door in the morning, but that was mainly because we have friends visiting right now.  Hopefully by the end of the week, we will be back into our routine, and not rushing so much :)  My 9 year old likes his teacher, and has a few friends in his class, so that is promising.  He is a little bummed that all of his really good friends are in other classes, but I am sure it will all work out OK in the end.   The biggest thing for me is to get back into the swing of making a lunch for him!  It might be time to get him involved, and have him help pack it each day :)

Today is our last day in Wisconsin.  Our flight leaves tomorrow at 5:45 am.  It is going to be an early morning, and a very long day!  We have had a great week here though.  Spending time with family, seeing friends from when we lived in Iowa, and getting to meet a few ladies from a fitness group I have been a part of for over a year.  I am ready to get back home, sleep in my bed, and see my husband though!  Ten more days, and school starts in Colorado too.  Man, did summer just fly by!

Going on vacation is always so much fun, but getting back is so much work!  All the laundry, the work, the cleaning, and everything else.  Plus, I am actually heading out on another trip this weekend.  My 9 year old and I are headed back to the Mid-West to see family for a week.  So much for a lazing and relaxing summer!  A little worried about how much I should get done ahead of time for my husband.  I hate to see what he is going to do for a full week of meals on his own!  But just because people are busy, doesn’t mean there isn’t time for desserts!  Especially no bake desserts, that come together in under 20 minutes.

I hope that everyone had a great 4th of July weekend!  We were busy spending time with friends, going to a Colorado Rockies game, getting in a good hike, going on a bike ride, and getting to watch fireworks.  It was so much fun, but kind of exhausting at the same time!  I kind of need a nap just thinking of all that we accomplished in the last 3 days.  Or at least a good solid week of relaxation!  Or maybe just movie night, where I can doze off a little :)  Make sure you get to the bottom for a great giveaway that involves free movies!

The second week of summer break is coming to a close, and it has been another busy one! We may be on summer break around here, but somehow our mornings are no less busy than during the school year.  My 9 year old is doing a science type camp this week, that starts at 8am!  That is an hour earlier than his school started.  Next week he is doing an outdoor survival type came with a bunch of his friends.  This one also starts at 8am.  So yeah, sleeping in is not happening around here anytime soon!  But he is having fun, learning new things, and getting to enjoy time outside, so it is all worth it in the end.

Who is ready for Father’s Day?  Just over a week a way, and the amazing Dad’s of the world get to be celebrated.  My own Dad will be on vacation somewhere thousands of miles away, so I won’t even get to call him to wish him a Happy Father’s Day.  My husband on the other hand, I am trying to come up with a fun plan for.  It is a little early in the season for hiking in the mountains, but we may venture up there, or see if we can find a bike trail that isn’t flooded.

Getting back into the swing of things after being gone for 4 days is work.  With all the unpacking, the laundry, the work to catch up on, the family you want to spend time with.  But, I think I am finally there.  I am sharing lots of pictures and talking about my time in Miami tomorrow.  Thank you so much to STAR Fine Foods for making it possible for me to attend the conference.

S'mores Cookie Bars - perfectly ooey, gooey, and chocolatey treat!  {Dinners, Dishes & Desserts}

S’mores are everywhere, in every way shape or form.  I have seen cake, bars, cookies, milkshakes…you name it, it is out there.  I first made these s’mores bars a few years ago.  I had kind of forgotten about them, but remade them recently, and they will now be on repeat at our house.  They were insanely good, and so addicting.  I brought them to the end of the year flag football pot luck for my son’s team.  I had a hard time staying out of them ahead of time, and I wasn’t the only one.  At the picnic, everyone kept talking about them!  I am not sure that I came home with any left.  And considering I also made a full batch of Frosted Sugar Cookies (decorated like footballs) for the team of 10 kids, I think you could say they were a hit.

S'mores Cookie Bars - a classic summer treat you can make any time of the year

S’mores Bars start with a graham cracker crust and then are topped with chocolate chip cookie dough that is full of lots of chocolate and marshmallows.  Then as the bars bake you top with the classic Hershey bar.  A classic summer treat that you can enjoy any day of the year, no campfire required.

Ingredients
Crust
  • 1½ cups Graham Crackers (1 sleeve), crushed
  • ⅓ cup butter, melted
  • ¼ cup sugar
Cookie layer
  • ½ cup butter, softened
  • ½ cup shortening
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2¼ cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1¼ cup mini marshmallows
  • 1 bag chocolate chips
  • 3 Hershey Bars, broken into pieces
Instructions
  1. Preheat oven to 350 degrees. Line a 13x9 baking pan with foil. Set aside
  2. Mix together the graham cracker crumbs, melted butter, and sugar. Press into the bottom of the prepared pan. Bake for 7 minutes. Allow to cool slightly.
  3. Cream butter, shortening, sugar and brown sugar together. Blend in eggs and vanilla. Stir in flour, salt and baking soda. By hand mix in the chocolate chips and marshmallows.
  4. Spread over the graham cracker crust. Bake for 15 minutes. Top with broken pieces of Hershey Bars. Return to oven and bake for 20-25 more minutes. Remove and allow to cool completely before cutting.
