Are you ready for the holiday baking season? It is pretty much upon us.  I have to admit, I am not quite ready.  This year has just gone by far too quickly, I want it to slow down a little!  But today, I am here with a special treat for you.  I have mentioned Katrina from In Katrina’s Kitchen before.  She is one of my very dear friends in this blogging world.  We were roommates at a conference earlier this year, and I was able to visit her when I was in Ohio a few weeks ago.  So this post is kind of special to me today.  In case you didn’t know Katrina came out with a cookbook (The Biscoff Cookie & Spread Cookbook)!!!  She worked so hard on this book, and it is gorgeous and so full of great recipes.

My husband and I spent the weekend in Denver by ourselves.  I am pretty sure the last time we spent the night away from our son was over a year ago.  We have gone out to dinner without him, or had a date night, but a full night away has been awhile.  That is one problem living over 1000 miles away from family!  He had a great time with his grandparents, and I am sure he got away with way more than we would have let him.  My husband and I relaxed and just had a low key weekend.  It was nice to relax in quiet, and not have to worry about being parents.  We went to 5280 Burger Bar for dinner on Saturday night, and it was so good.  If you are ever in Denver, you must go there!  Some of the best burgers I have ever had.

Halloween is right around the corner, are you ready?  Do you dress up and go to a party?  Are your kids set with their costumes?  I think we are almost ready here.  My son decided that he is going to be Poseidon for Halloween.  He loves all of the Percy Jackson books and Greek mythology, so it is very fitting.  My mom helped to make a toga for him, and he has a rope belt, a crown, and a wig/beard.  I still need to spray paint the devil’s pitch fork silver, so it can be his trident.  But I think that is all I have left to do.  He is very excited, and ready for Halloween to be here!

My son has a 4 day weekend this weekend.  They have Thursday and Friday off for conferences.  My in-laws are coming to visit, so he is going to have lots of time with them. Often times when family comes to visit he has to go to school, and misses out on seeing them more than just the weekend.  Not this time!  And he is beyond excited.  Saturday my husband and I are headed to Denver for time to ourselves.  Not sure what we are going to do yet, but we haven’t had a night away in forever, so it will be a nice break.

The temperatures are finally starting to cool off in Colorado, at least for the next week.  It was 95 degrees yesterday, so you really never know.  But I am taking advantage of the 70 degree temps, and turning on the oven to do some baking.  Are you ready for apples and pumpkin?  I am craving apples, cinnamon, and the flavors of fall.  As soon as the calendar changes to September, I am ready for summer to be over and to move on.  Fall is my favorite season.  The colors, the temperatures, and the foods; I just love it all!

We have made it through the first week of school.  So far the year is off to a good start, I think my 9 year old is going to love 4th grade.  To celebrate the end of a great week, my son is having a friend sleep over tonight.  I guess I better get prepared!  A fun dinner and maybe ice cream sundaes need to happen.  Or maybe that is just what girls do?  Or maybe I am just old, and that is what I remember from being a kid?  Either way, guess I better figure it out quickly!

We had the first day of school here yesterday.  For the most part things went well.  It was a little hectic getting out the door in the morning, but that was mainly because we have friends visiting right now.  Hopefully by the end of the week, we will be back into our routine, and not rushing so much :)  My 9 year old likes his teacher, and has a few friends in his class, so that is promising.  He is a little bummed that all of his really good friends are in other classes, but I am sure it will all work out OK in the end.   The biggest thing for me is to get back into the swing of making a lunch for him!  It might be time to get him involved, and have him help pack it each day :)

Today is our last day in Wisconsin.  Our flight leaves tomorrow at 5:45 am.  It is going to be an early morning, and a very long day!  We have had a great week here though.  Spending time with family, seeing friends from when we lived in Iowa, and getting to meet a few ladies from a fitness group I have been a part of for over a year.  I am ready to get back home, sleep in my bed, and see my husband though!  Ten more days, and school starts in Colorado too.  Man, did summer just fly by!

Going on vacation is always so much fun, but getting back is so much work!  All the laundry, the work, the cleaning, and everything else.  Plus, I am actually heading out on another trip this weekend.  My 9 year old and I are headed back to the Mid-West to see family for a week.  So much for a lazing and relaxing summer!  A little worried about how much I should get done ahead of time for my husband.  I hate to see what he is going to do for a full week of meals on his own!  But just because people are busy, doesn’t mean there isn’t time for desserts!  Especially no bake desserts, that come together in under 20 minutes.
