We have been in New Zealand for over a week now.  It is amazing, and we are loving it!!  I am posting some pictures on Instagram, so follow along if you are interested.  Depending on time, I might throw in a Thursday Things post and share some of our trip before we get home. I will do a few different write-ups on the trip once we get home for sure.  New Zealand is such a magical place, I wish everyone had the chance to visit.  So far we have seen mountains, lakes, oceans, gone on amazing hikes, boat rides, and scenic drives.  Plus my husband and son have eaten more fish and chips than I can count!  A great start to the trip.

Today is the day!  Tonight we are getting on a plane and flying to New Zealand for 6 weeks!  We have been planning this trip for what seems like forever.  I never actually thought we would get to this day.  But it crept up on his, and the last few weeks have been so busy trying to get ready.  Now to just travel, go through airports, sit on planes and fly for the next 26 hours.  It will all be worth it.  My parents are taking us to the airport this afternoon, and then spending the next 2 months at our house.  Hopefully they will fall in love with Colorado, and be ready to move here as soon as we get back.

Last time I needed an oil change, I called to make an appointment.  So this time when I needed one, I called again.  They told me that they do it on a 1st come, 1st serve basis.  So I asked when was a slow time, and I would have the least wait.  They said 7:30 am when they first open or between 2-3pm.  So I went at 1:45, hoping I would haven’t to wait too long.  90 minutes. They told me it would be 90 minutes.  I had to pick my son up from school, so that was not an option.  The next day, as soon as I dropped my son off at school I went straight there; arriving at 8:45 am.  I was told I was the next car.  Over 90 minutes later I was finally leaving.  Since when does it take so long to change the oil in a car?!?!?

What a busy weekend!  Our new fridge is here!  I am super excited to have a new fridge.  I have wanted a French door one for years, and it is all I hoped it would be.  There is so much storage it is crazy.  I feel like I need to go shopping just to fill it up. My last fridge was so small, so it will take awhile to get used to all of this extra space.  Saturday night I took my 9 year old to a hockey game.  A friend gave us tickets, and we had 2nd row seats right near the penalty box.  My son was in absolute heaven.  You could see everything, and it was right in front of you.  He loves just about any sporting event, but this is the closest we have ever gotten, and he loved it!

Sunday is the day of the big game!  Are you having a get together?  My husband is too mad that the Packers lost, so we aren’t doing much of anything.  We will hang out the 3 of us, have a few snacks and watch the game.  But that is about it.  I thought about trying to convince him we needed to have a few friends over, but then I would have to clean my house, and be on the ball.   I am feeling kind of lazy lately, so that seemed like kind of a lot to ask.  A family night sounds good to me!

Are you ready for the weekend?  Stupid question.  Sorry.  My son has his last basketball game of the season tomorrow morning.  We also have a friend flying in from Iowa for the weekend.  We haven’t seen him in over a year, so it should be fun to catch up and just hang out for the weekend.  The guys are going to go to a hockey game on Saturday night, so I have to come up with something fun to do with my son.  The game is in Denver at 8pm, so that is a little late for a 9 year old. Maybe a fun dinner and a movie, we will see.  What do you do with your kids for special nights?

December is flying by!  It is hard to believe that we are only 2 weeks away from Christmas.  The weather here in Colorado has been in the 50’s, so it is hard to realize it is actually December.  Don’t get me wrong, I am loving this weather, and would not change it for anything!  Going for walks outside in December is perfect in my opinion. Come March when we are freezing cold and have lots of snow, I will be wishing we had these nice days.

White Chocolate Coconut Truffles - super easy and perfect for any holiday get together

After being gone for a week, this week is crazy!  Trying to get work done on top of getting the house ready for Christmas, and doing some baking.  I have a cookie exchange this weekend that I need to figure out what I am making!  I love doing cookie exchanges.  My family is kind of picky about what cookies they will eat, but just getting to hang out with friends and share food together is so much fun.  Stay tuned, because I am sure whatever I make will show up here later this month.  I can’t make something I have shared with them before!

Are you ready for the holiday baking season? It is pretty much upon us.  I have to admit, I am not quite ready.  This year has just gone by far too quickly, I want it to slow down a little!  But today, I am here with a special treat for you.  I have mentioned Katrina from In Katrina’s Kitchen before.  She is one of my very dear friends in this blogging world.  We were roommates at a conference earlier this year, and I was able to visit her when I was in Ohio a few weeks ago.  So this post is kind of special to me today.  In case you didn’t know Katrina came out with a cookbook (The Biscoff Cookie & Spread Cookbook)!!!  She worked so hard on this book, and it is gorgeous and so full of great recipes.
