Banana and Chocolate Chip Baked French Toast

Have you been over to Damn Delicious written by my friend Chung-Ah?  If not, you are missing out!  Chung-Ah is super sweet (she even sent me chips from Trader Joe’s once because I couldn’t get them), and always has something amazing to share.  Don’t miss her Homemade Funfetti Cupcakes, Southwest Quinoa Sliders with Avocado Cream Sauce, or Hoisin Asian Meatballs.

Spicy Chipotle French Toast #KraftFreshTake

Spicy Chipotle French Toast

I am so excited to share this new program with Kraft Foods that I am a part of.  Kraft has a new product line out called Kraft Fresh Take.  You may have seen it in the cheese case at your grocery store.  Kraft Fresh Take is a cheese and seasoned breadcrumb mixture, and it is a busy cooks dream.  I was given the Spicy Chipotle Cheddar variety for my challenge.

Peanut Butter Stuffed French Toast

It is Secret Recipe Club time again!  This month I was assigned  This Mama Cooks.  Anne-Marie has a very extensive website full of great recipes as well tips, coupons, and other deals.  Anne-Marie also has a whole section of Weight Watchers recipes!

My son is a huge fan of french toast.  He loves it topped with strawberries, so when I saw this, I immediately knew he would love it!  One Saturday morning I made this for him.  He was in heaven.  My husband wasn’t sure how the strawberries and peanut butter and maple syrup would go together, but it worked.  My 7 year old likes crunchy peanut butter, so that is what I used, but you could use whatever you like.

This is a very filling and somewhat decadent feeling breakfast.  It comes together rather quickly (not much longer than making traditional french toast).  It would be great for a weekend breakfast, or even a fun Thanksgiving breakfast.

French Toast Muffins

We had a great weekend.  My in laws were here to celebrate my sons birthday.  He turns 7 on Wednesday.  They were able to get a last minute flight out here to surprise him.  He was very excited when he woke up Friday morning to find them here.  They were able to see his flag football game yesterday.  They didn’t win, but they played so much better than the week before.  My 6 year old even managed to get 4 flags!  He was so proud of himself.  They have another game tonight, and 2 practices this week, so it will be a week full of football here!

It has been far too long since I have given you a muffin recipe.  I made some with the left over Easter candy, but they never made it to the photo shoot :)   I made these last week, and they were a hit.  They really do taste like french toast in a muffin form.  You even get to have a little syrup on top :)   As usual, I froze the leftovers, and they were still moist and tasty when I took them out.  My 6 year old told me “Mommy, you always make the best home made stuff”.
