Gingerbread Men Cookies

Today is the last day of Christmas Week :(  I hope you enjoyed the full week of Christmas treats as well as great giveaways.  To end the week I am going out with a bang!  I made gingerbread men cookies.  This is the first time I have ever made gingerbread men.  They weren’t something that my mom ever made as a kid, so I never tried to make them before.  This year though, my 8 year old put in a request.

My husband said his mom made gingerbread men cookies a few times when he was younger, so I asked her for her recipe.  She got the recipe from a free cookbook the electric company gave out in 1958.  So you could say the recipe has been around a few years.  I did up the spices a little bit, to give it that full on gingerbread flavor.  Aside from that, I kept it the same.  These gingerbread men are easy to make thick and chewy or thin and crispy.  I like cookies thick and chewy, so I rolled the dough out rather thick, and baked for 10 minutes.  If you want the crispier you can roll thinner or bake for a little longer.

I almost have a panic attack when I walk into Hobby Lobby or Michael’s Craft Store.  I am not crafty, and very easily over whelmed with stuff like that.  So decorating these cookies made me nervous!  I had visions of cute little bows and different colors.  The bows came out a big mess, and then I couldn’t figure out how to add color and have it still look good.  In the end, I think they turned out rather cute.  Santa will definitely enjoy a couple of these left out for him on Christmas Eve.

 

Gingerbread Men Cookies
 
Serves: 3 dozen

Spicy gingerbread cookies. Perfectly festive for the holidays.
Ingredients
  • ½ cup boiling water
  • ½ cup butter, softened
  • ½ cup dark brown sugar
  • ½ cup molasses
  • 3 to 3½ cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground ginger
  • 1 tsp nutmeg
  • ½ tsp ground cloves
  • 1 Tbls cinnamon
Instructions
  1. In the bowl for an electric mixer pour water over the softened butter. Add brown sugar and molasses, mix well.
  2. In a separate bowl whisk together 3 cups flour, baking soda, salt, ginger, nutmeg, cloves, and cinnamon. Add to molasses mixture, blend well. Add more flour if the dough is really stick.
  3. Cover and chill for 2 hours.
  4. Preheat oven to 375 degrees
  5. Roll dough onto a lightly floured surface about ⅛ to ¼ inch thick. Cut into "men".
  6. Bake for 10 minutes. If you want crispy cookies, you can bake a little longer. Remove from oven, and allow to cool.
  7. Frost if desired.

White Chocolate Gingerbread Cookies

I am excited to be a part of The Holiday Recipe Club Blog Hop that Erin at Big Fat Baker has been putting together.  We were all given 3 flavors (peppermint, eggnog, and gingerbread) for this round.  Our job is to then make something using one of those 3 flavors.  I had a hard time picking!  I love chocolate and peppermint together this time of year.  But, in the end I decided to go with Gingerbread.  It is fairly new to me.  I mean I have had a Ginger Snap before, and a Gingerbread Man Cookie, but I have never baked it myself.  It is a very classic Christmas flavor to me, just not something I crave.  That was until I saw this recipe by Hanging on by a Needle and Thread.  I knew immediately I had to make these!

White Chocolate Gingerbread Cookies

I had to make adjustments for the altitude, so I was nervous how they would turn out.  But they were thick and chewy, exactly how I like my cookies!  I may have figured out this high altitude baking thing.  I say that, and the next thing I bake is not going to turn out!  That, and I haven’t tried cake yet, I hear that is the hardest to get to turn out! Note that my altitude adjustments are in parenthesis in the recipe below.

These cookies are full of the gingerbread flavor with plenty of sweetness from the white chocolate chips.  Perfect to leave out for Santa!
