This was the first weekend that I have been home in a month.  It was so nice not to be traveling, and have some relaxation time.  Although we did head to Denver to explore some and meet my brother and SIL for lunch.  Today on the other hand, is a stressful day.  I was summoned for jury duty, and have to spend the day seeing if I will be selected to sit on a jury.  Given I stay home with my 8 year old, this is a hectic thing to have happen.  Luckily, I have amazing friends, and a husband with a flexible job.  Now let’s just hope I don’t have to come back tomorrow :)

Chocolate Applesauce Muffins

Chocolate Applesauce Muffins
Today my husband and I are taking the day off.  No housework, ok we might do a little, but nothing major.  And, NO kid!!  He is going on adventure for the day with Grandma and Grandpa, so we get the day to ourselves.  We haven’t had a day together just us in a long time, and have been working like crazy lately, so I am very excited for today.  We even get to go out to a nice dinner :)


Before I go on my day of fun, I wanted to show you these muffins.  They are actually good for you.  I calculated around 130 calories in one muffin. Having chocolate for breakfast just got better!  I couldn’t help it and mixed in a few peanut butter chips, but you don’t have to do that if you don’t want to.

These muffins were a huge hit with my 7 year old.  We ate a couple the first day, and I froze the extras, like I normally do.  They disappeared from the freezer very quickly.  I was a little worried these would be dry, but they were very moist and full of chocolate flavor.  I am going to have to make another batch of these soon to restock, I might change up the chips I fold in next time.

Double Chocolate Chobani Muffins

Well, our flag football season is over.  The boys had the playoffs on Sunday, and unfortunately did not win their game.  They all improved so much this season, it is incredible.  Too bad they can’t have a win on their record to show it.  The coaches were great and had a picnic for everyone after the game.  The boys had a great time just playing together during the picnic.  My 7 year old is already planning his next season! I can’t help but share a few pics :)

Ok, you didn’t come here to see football pictures, on to the food!  You all know that I love muffins.  But traditionally they really are not good for you.  Lately I have been trying to find ways to make them a little better for you.  The double chocolate sounds bad, but then you put in a ton of Greek yogurt, and you have really helped with the health factor.  These still aren’t “health food”, but you can feel a little less guilty about eating these.

The yogurt gives them a wonderful little tang in the background.  But they are still chocolately, super moist, and plenty sweet for breakfast.  Next time I am going to try swapping out the oil for some applesauce, to try to make them just a little bit better!
