Fall is definitely in the air. The weather here has been up and down like crazy, but it seems like it is finally cooling off just a little bit. I love the fall season. All of the colors, the foods, and the cooler temps (hello jeans and comfy sweaters)! I am all about pumpkin, but let’s just give it a little more time before we break that out. Apples deserve their day too :)  After a day outside in the cooler weather, I love coming in to warm up with a hot drink.  And hot apple cider is one of my favorites!

Welcome to day #2 of Christmas Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Jen of Juanita’s Cocina. Today’s theme for Christmas Week is “Peppermint Surprise”.

I love peppermint this time of year, but since I shared Mint Chocolate Pudding Cookies yesterday, I wanted to go a little different today.  So I did a drink!  I am not a coffee drinker, but I do like going to Starbucks for one thing.  Their Peppermint Hot Chocolate is amazing!  I am sure it is full of whole milk, and full fat whipped cream, but I made something pretty darn close with a lot less calories at home!

Hot Chocolate from scratch is so easy, and tastes so much better than those instant packets.  All you have to do is heat some milk over a low heat, throw in some chocolate to let it melt.  Stir in a little sugar, and in this case peppermint, and you are done.  You don’t even have to stand over it, stirring the whole time!

I made this while my son was at school, but made sure to save him some for a snack.  He was thrilled. He loves hot chocolate, and was very happy with this version.  Plus he got a candy cane out of it, so how could I go wrong :)  This would be great to have around for the holidays.  Make this, dump it in the crock pot to keep it warm, and you have a great party drink.  You could even swap out the peppermint extract for a peppermint liquor for the grown ups!

As I am sure you know October is Breast Cancer Awareness month.  I think that most people out there have been touched by this disease in one way or another.   I recently had a friend diagnosed with breast cancer, and I became even more aware of it.  According to BreastCancer.Org 1 in 8 women will develop breast cancer in their life.  About 85% of women diagnosed with breast cancer have no family history of the disease.  To me, the moral of the story is it can affect just about any one!  And the best way to find it – self exams.  Please, take the 1 minute a month and do this test on yourself!

So Cassie, from Bake Your Day and I are teaming up this week.  We rallied the tro0ps and are bringing you a full week of pink recipes, or recipes that are helpful in fighting cancer.  Each day at the bottom of our posts you will see links to the other blogs who are helping us raise awareness.  Check out what they make, we have some seriously talented people involved! Today I went with pink.  I made a strawberry hot chocolate.  You could go the quick route and use Nesquik strawberry powder, but I used actual fresh strawberries.  So maybe it is a little on the healthier side too :)  The fresh strawberries give it a not too sweet, and real strawberry flavor.  Great way to warm up on these cooler days.
