We spent this past weekend up in the mountains with my family. My parents were in town, so we rented a house to celebrate Christmas. My brother and SIL met us up there as well. It was so much fun, and so relaxing. We brought tons of food, so we could cook and just relax. Traditionally we have French Toast for our Christmas breakfast, so that was on the menu for sure. My brother wanted to add his favorite blueberry smoothie to breakfast as well. Blueberries are known to help with memory, so there was joking all weekend about making sure we got enough blueberries in our diet.
Have you done with all of your Christmas shopping yet? Are you one of those that waits until the last minute? I am usually pretty good about getting it done a little early. I spent a bunch of time wrapping presents the other day, only to find that I am way short on gifts for both of our Dads. Everyone else is covered, but those two need more! So if you have any great Dad ideas, for Dads that don’t need anything, let me know.
Are any of you as sick of homework as I am? As a kid, I never thought of homework being hard on my mom. But wow, it is just as much work for me as it is for my 8 year old. Getting him to sit down and actually do it. Making sure that he writes his best, and it isn’t a mess. Helping him come up with ideas for a book report project. Practicing spelling words, filling out the planner with how many minutes he read and did math facts. If I am hating homework in 3rd grade, I don’t even want to know what it is going to be like when he is older.
Things are finally starting to cool down and feel like spring around here. The mornings are crisp, and the perfect time to open up the windows. The sun still warms up the day, but as soon as it sets you can feel fall in the air again. Last weekend we made apple cider at home. It is a fall tradition at our house, and it has me in the mood for fall baking! Apples and pumpkin full steam ahead

It is no surprise to you that I like muffins. I think there is nothing short of 30 muffin recipes on here. Don’t believe me? Go check out the recipe index. I am just a little obsessed. As well as liking muffins, you know that I like to try to make them a little healthier. I mean, if you are going to eat cake for breakfast, you have to try to make it as healthy as possible, right?

I should have been more on top of things! I did give you Frozen Key Lime Margarita Squares and Blue Vodka Lemonade last week though, both of those would be great additions to your get together today.
It is common knowledge by now that I like muffins, and I like to try to make things just a little bit healthier. That is where these chocolate muffins come in. I know you are saying to yourself; “chocolate muffins, healthy? Yeah right!” Just hear me out!
I hope that everyone had a great Thanksgiving weekend. If you traveled, I hope you made it home safe and that your travels were uneventful. We traveled to Wisconsin to be with our families. It was so nice to have a week off from cooking, and get to relax with family. Now we are back though, and it is time for school, and schedules again. You all know I am a huge fan of muffins, and these are a must this week as we get back on track.
My 7 year old thought these were one of the best he has had in a long time. Chocolate Chip Muffins are normally his favorite, but he is also a fan of anything with cinnamon. So I decided to mix them all together for these. I am not sure muffins have ever disappeared more quickly from my freezer. He had them every day until they were gone.
If a recipe has cinnamon in it, I think you need to taste it! So I added a full tablespoon to this batter. If you don’t want cinnamon to be the dominant flavor, you could cut back to 1-2 teaspoons. But, I think you should go all the way It is fall after all, and cinnamon is the perfect fall spice.

The #SundaySupper event went Orange today. Pam, from The Meltaways, is hosting this great “All Things Orange” Event. There are all kinds of great fall foods that are orange; pumpkin, squash, sweet potatoes, carrots and more. But I am sure you could have guess what I would have picked, even before you read the title of this post. Pumpkin!! I am kind of obsessed lately.
So not only could you have guessed pumpkin, but knowing me you probably could have guessed muffins too. I am realizing that I am kind of predictable. But this is a healthy muffins recipe (relatively speaking). There is less than 2 Tbls of oil in this whole thing, and I used whole wheat flour! So you don’t have to feel guilty about having one of these little guys for breakfast or a snack.
Muffins always go over well with my 7 year old. But he is obsessed with pumpkin just as much as I am, so he loved these. I still have some in the freezer, which makes for a great treat after school. Plus, you can never go wrong when you add chocolate chips. If you wanted to skip the chocolate, walnuts or pecans would be great. Even raisins would go well in here, so have fun!
