Today is Secret Recipe Club Reveal Day!!  I made muffins, are you surprised?  By now, you all know that I am a big fan of muffins.  But this month, I have been on a kick to clean out my pantry and freezer before we leave on vacation.  The muffins did just that!  They used up some bananas in my freezer, and an open bag of chocolate chips.  The fact that I now have muffins in my freezer is beside the point.

Cinnamon Chocolate Chip Muffins

I hope that everyone had a great Thanksgiving weekend.  If you traveled, I hope you made it home safe and that your travels were uneventful.  We traveled to Wisconsin to be with our families.  It was so nice to have a week off from cooking, and get to relax with family. Now we are back though, and it is time for school, and schedules again.  You all know I am a huge fan of muffins, and these are a must this week as we get back on track.

My 7 year old thought these were one of the best he has had in a long time.  Chocolate Chip Muffins are normally his favorite, but he is also a fan of anything with cinnamon.  So I decided to mix them all together for these.  I am not sure muffins have ever disappeared more quickly from my freezer.  He had them every day until they were gone.

If a recipe has cinnamon in it, I think you need to taste it!  So I added a full tablespoon to this batter.  If you don’t want cinnamon to be the dominant flavor, you could cut back to 1-2 teaspoons.  But, I think you should go all the way :)   It is fall after all, and cinnamon is the perfect fall spice.

Pumpkin Chocolate Chip Muffins #SundaySupper

The #SundaySupper event went Orange today.  Pam, from The Meltaways, is hosting this great “All Things Orange” Event.  There are all kinds of great fall foods that are orange; pumpkin, squash, sweet potatoes, carrots and more.  But I am sure you could have guess what I would have picked, even before you read the title of this post.  Pumpkin!!  I am kind of obsessed lately.

So not only could you have guessed pumpkin, but knowing me you probably could have guessed muffins too.  I am realizing that I am kind of predictable.  But this is a healthy muffins recipe (relatively speaking).  There is less than 2 Tbls of oil in this whole thing, and I used whole wheat flour!  So you don’t have to feel guilty about having one of these little guys for breakfast or a snack.

Muffins always go over well with my 7 year old.  But he is obsessed with pumpkin just as much as I am, so he loved these.  I still have some in the freezer, which makes for a great treat after school.  Plus, you can never go wrong when you add chocolate chips.  If you wanted to skip the chocolate, walnuts or pecans would be great.  Even raisins would go well in here, so have fun!

Peach Cobbler Muffins

Did you enter for your chance to win a $1000 from Visa.  With my blog being down most of yesterday, I wanted to make sure you check it out.  Who can’t use $1000, wish I could win!

Peach season is pretty much on its way out.  We still have stands all over the place here in Colorado, but I think they will be gone soon.  So I had to share this recipe with your right away.  You could easily use frozen peaches, but we all know that fresh always adds a little extra something.

These muffins are soft, tender, full of cinnamon, and just perfect.  My son who isn’t a big fan of peaches didn’t even want to try one.  I told him I knew he would like it, so he had to at least give it a chance.  He loved it.  He even asked for them the next morning for breakfast.

Crumb toppings are always the best part of muffins, so of course this has one.  Really, there needs to be a dessert that is more crumb topping and less of all the other stuff.  Somehow I am not sure how that would work out.  But a girl can dream, right?

Muffins are pretty much the perfect on the go breakfast.  They may not always be healthy for you, but they are portable, and sure do taste good!  I store them in the freezer, so you can take one out and have a fresh muffin (after you microwaved it for 30 seconds) any day of the week.  With school back in session quick breakfasts are key for a lot of people.  I am not going to try to convince you that these are healthy, because they aren’t.  But they do have fresh, plump blueberries, so that helps a little!

I made these about a week ago, and my 7 year old said they were the best muffins he has ever had.  Better than Chocolate Chip, better then French Toast, better than Double Chocolate Peanut Butter Swirl?  I guess so.  Of the 20+ muffins on my blog, he thinks this is the best!  And really, from a kid who doesn’t like blueberries, I think that says a lot!

I was a little nervous about this recipe because of the sour cream.  I can’t say that I have baked with sour cream before.  But it is from Cook’s Illustrated, so I am pretty sure you just go with it, and do what they say.  They have never steered me wrong before.  And just as I figured, they muffins came out perfect.  They rose beautifully, the blueberries stood out, and the cinnamon sugar topping, although optional, was well worth it!

Mocha Muffins & Giveaway

If you know me, you know I am not a fan of coffee.  So when International Delight contacted me about their new Iced Coffee’s, I almost responded immediately with “sorry, but no.”  But then I got to thinking about you, my dear readers.  I know most of you love coffee.  I am the strange one :)   Plus I knew my Mother-in-Law would be visiting, and she loves her coffee.

Obviously I am biased, being that I don’t drink the stuff.  But I don’t understand the draw of spending $4 at a coffee house at least once a day for something you could make at home.  I realize I am cheap, but how can it be worth that much money.  I get the convenience, but making specialty drinks at home can’t be that difficult.  International Delight has introduced the first-ever iced coffee drink that’s made with coffee house quality 100% Arabica coffee, real milk and cream and served in a half-gallon container.  They come in Mocha, Vanilla, or Original, for less than the price of one drink at your local coffee house.  All you have to do is pour over ice, and you are done!

Mocha Muffins

I sent my MIL to the store and she came back with the Mocha variety.  I even tried some!  It was actually pretty good (coming from someone who doesn’t like coffee).  It was chocolatey, with a hint of coffee in the background.  We did find that if you heat it and add it to your black coffee you have one delicious Mocha Coffee :)   Keep that in mind when you have just a little left in the carton.

I decided to make muffins with some of the Iced Coffee.  That should not surprise any of you.  But really, coffee is a morning drink, so what better with your morning coffee than a delicious muffin.  These muffins went over well with everyone.  Even my 7 year old loved them.  I still have a few left in the freezer, and he just was for them for breakfast this morning.

Today my husband and I are taking the day off.  No housework, ok we might do a little, but nothing major.  And, NO kid!!  He is going on adventure for the day with Grandma and Grandpa, so we get the day to ourselves.  We haven’t had a day together just us in a long time, and have been working like crazy lately, so I am very excited for today.  We even get to go out to a nice dinner :)


Before I go on my day of fun, I wanted to show you these muffins.  They are actually good for you.  I calculated around 130 calories in one muffin. Having chocolate for breakfast just got better!  I couldn’t help it and mixed in a few peanut butter chips, but you don’t have to do that if you don’t want to.

These muffins were a huge hit with my 7 year old.  We ate a couple the first day, and I froze the extras, like I normally do.  They disappeared from the freezer very quickly.  I was a little worried these would be dry, but they were very moist and full of chocolate flavor.  I am going to have to make another batch of these soon to restock, I might change up the chips I fold in next time.

Lemon Chia Seed Muffins

Lemon Chia Muffins

Today is Secret Recipe Club Reveal Day!  In case you didn’t know, you can go here, to join in the fun!

I was super excited when I received my assignment this month.  I have been secretly stalking Nutmeg Nanny for months.  She has a great site, with all sorts of amazing recipes.  The girl can mix a cocktail like no other as well.  Brandy lives in New York where she really is a nanny, and she recently got engaged.  If you haven’t met Brandy before, go check out her site, lots of yummy stuff!

I had a seriously hard time figuring out what to make.  I actually made her Honey Spiced Glazed Chicken, and it was amazing.  My pictures didn’t do much for me, so I took that opportunity to try something else!  I also have this Marinade recipe, Asian Coleslaw, and Cheesecake Dip recipes printed to try soon!  But in the end I chose a muffin, big surprise!

I had recently purchased Chia Seeds, because I have heard such great things about them.  I have been wondering what do to with them, and then I saw these muffins!  The perfect thing to test them out.  You can’t really even taste them.  So if you don’t have them, just leave them out.  Or you could use poppy seeds instead.  The glaze on top is light and has great lemon flavor to go with the muffins.  You could omit the glaze if you are trying to be a little healthier, but it is just so good!

My 7 year old was a little hesitant at first because of the chia seeds all throughout, but he liked them.  He isn’t big on lemon anything, so they weren’t his favorite.  Which just means more for me!  They are just so moist and light, it is hard to stay away from them!
