Well the snow came.  And it came in massive amounts.  I think we got around 14 inches.  School was cancelled yesterday, so it was a day at home playing with my 10 year old. Not that we would have gone anywhere, but my husband had to take my car into work to make sure he could actually get out of the neighborhood.  So we baked cookies, he played in the snow, and definitely made some hot chocolate.  I am kind of over winter, but an impromptu day off once in awhile is nice!

Beef Stroganoff was always a favorite of mine growing up. My mom always made it with strips of steak (I have no idea what cut she used) and tons of mushrooms. We served it over rice and that rich sauce was so delicious. I can’t figure out why, but it has never been one of my husband’s favorites. So I almost NEVER make it. I am talking, I think I have made it two or three times in the 14 years we have been married. So I decided to try to compromise with this beef stroganoff ravioli skillet, because he is a big fan of ravioli.

This last weekend we were at my son’s Lego Robotics state competition.  I have talked about it a few times before, so if you are a regular you know they were competing at the State competition.  Well, they did awesome!!!  They placed 4th in the robot games and 1st in robot design.  They worked so hard, so it was great to see them recognized for their hard work. They got to go to school yesterday and tell all of their friends and teachers how the competition went. Everyone was so excited!

Happy Friday!!  So this is the weekend of the Lego Robotics state competition.  The boys did really well at their qualifier in November, and they are excited and ready to show off tomorrow.  They took all the feedback they received at the qualifier and expanded on their project, and added to their robot.  So we will see how things go, but the boys are pretty confident about their team and how they will do. Should be a fun and exciting day!

I was up at 4:30 am this morning to catch a flight to Chicago.  As excited as I am to get to hang out with other bloggers, meet new friends and learn a ton, I do not enjoy the early wake up call.  The good part…I didn’t have to drive to the airport.  Thankfully, Sandra from A Dash of Sanity lives near me and is going to the same conference.  So she drove!  I really don’t mind driving, but at 5:00 in the morning, there are other things I would rather do.  So I am off to a weekend of learning, and the boys in my life are home.  I have to miss my son’s first basketball game of the season, but hopefully they will do well and I can hear all about it later.

My son comes home today!!  He only left on Wednesday, so it isn’t like it was a long time or anything. But this is the first time he has been away from home and not at families house.  He has spent the weekend with his aunt and uncle, or a week at Grandma’s before.  But this was a school trip.  In Colorado they do something called Eco Week when they are in 5th grade.  They go up into the mountains to hike, camp, and learn about the outdoors for 3 days.  I can’t wait to hear all about it, I am sure they all had so much fun!!

I hope that everyone had a great weekend!  I was able to enjoy some much cooler weather, some gorgeous fall colors, and spend time with some amazing ladies.  So it was a great weekend! If you ever have the chance to visit the Colorado mountains in the fall, you need to.  The changing leaves on the Aspens are just gorgeous!  Now it is back to reality.  But it is almost like fall has arrived in Colorado….almost.  The highs are only in the 70’s this week.  After 80’s and 90’s for all of September I will take it!

Today I am sitting in the middle of a park watching my son and his friend play tennis.  My son has been obsessed with tennis this summer, and is always asking if I will take him to the courts near our house.  Last night he had a friend spend the night, so this morning I brought them over here to play.  It is somewhat comical to watch, because neither of them are any good, but they are trying to play a real game.  We finally signed my son up for lessons that start next week, so we will have to see how that goes.  Next up, I am going to need lessons, so I can actually play with him.

I think things are finally back to normal around here, after being gone for 6 weeks.  The hardest part of me is getting back into meal planning. Seriously, planning what groceries to buy, and what I am going to make each day for the week has gotten nearly impossible.  I have no idea why!  I am usually pretty good at it, but I think I went to the store 5 out of 7 days last week.  Hoping this week is better, but considering I don’t have a menu written down, I don’t have my fingers crossed.  Baby steps, I guess.
