Is anyone else over winter?  I kind of feel bad complaining, but I am really tired of it being so darn cold when I go to run errands.  And the snow!!  They do not plow our neighborhood streets, so after all the freezing and thawing it is just a mess of ruts and not easy to drive on.  We are supposed to get into the 40’s for the next few days, so I am really hoping the roads melt quickly.  And then if spring wants to arrive in January, I am good with that too.

Looks like the holidays are over and it is back to work.  My son doesn’t actually have school today, but for the rest of the world, it is back into routine, schedules, work, and school.  I am so ready to be back.  I loved being home with my family for the last two weeks, but the lack of structure gets to me.  Over the last few days my husband and I, cleaned out closets in our house.  We have so much stuff it is incredible.  So much work to go through everything (I am talking days), but it feels so good to get rid of stuff and de-clutter.  Now to see how long we can keep it that way!

I can’t believe a new year is here already! The holidays are over, and it’s back to real life. Back to school for the kiddos, and back to work for the rest of us. That means no more cookies for dinner, and time to actually cook real food again. Like pasta with sausage in a creamy tomato sauce. And it is ready in about 25 minutes! Don’t worry, baby steps back into the real world.

The week of Christmas is here!  I am sure you are running around like crazy trying to get everything done.  I know I am.  My son is now off from school until January 6th.  So not only do I have him to entertain, I have to get ready for Christmas, get work done, and everything else I forgot about for the last month.  Hopefully you have a couple extra days off this week, and can get everything done before the big days arrives.  And because I know everyone is busy, I have a super quick and easy pasta dinner to get you through the week.  Seriously, 20 minutes and you are done!

What a weekend!  I will have to fill you in on my trip to Ohio with Certified Angus Beef later in the week.  I learned so much, I got to cook with real chefs, and had such a great time.  I also got to hang out with some wonderful bloggers for a couple days.  Getting to meet the people you see online all the time is always a good time.  It is a strange job to have where you sit in your house all day, and talk to people on the internet.  So nice to actually put faces to names and see we are actually real people!

We spent the weekend visiting friends who live in the mountains.  They live in the highest incorporated municipality in the US, which means that winter has started up there.  The two hour drive up was gorgeous seeing all of the snow capped mountains.  On Sunday when we went to leave, part of the interstate was closed because of accidents and ice on the road.  We were fortunate enough for it to open up for 45 minutes, and we were able to get home without a long detour.  As gorgeous as the drive was, I am so NOT ready for winter.  Only 2 hours away at our house it is supposed to get up to near 80 this week, so I think we have awhile before it gets too cold, but this weekend was a reminder it is just around the corner.

Pasta Milano (Copycat Macaroni Grill)

Have any of your kids ever done Lego Robotics?  Can we just talk for a second about how crazy it is!  My son’s school has always had quite a few teams in the past.  This year they did not get a teacher willing to take on all the work (I honestly don’t blame them).  My son had been looking forward to it for forever, and so had one of his good friends.  So we got talking, and after a few meetings we started a team with our son’s friends.  We have eight 4th grade boys on our team.  Fortunately, we have been able to meet at the school and use their supplies, or it wouldn’t have happened.  But holy cow, is it a lot of work!  My husband is the techy guy, so he is helping the kids with the technical and building side of things.  We are meeting 3 times a week, and there is so much more involved than just building a robot.  This will be an amazing experience for the kids, but I am a little over whelmed with how much we have to accomplish in just 2 months.

We are in the last few days of August.  Hard to believe how fast the summer flew by.  This weekend my husband and I celebrate 13 years of marriage.  We actually have a friend who is going to watch our 9 year old so we can go out!  Not sure what we are doing yet, but I am excited for a night out, it seems like it has been FOREVER!  This weekend we also have friends from Iowa that will be in town.  It has been over a year since we have seen them, so I am super excited for their visit.  Hopefully the weather stays nice, so we can enjoy lots of time outside.

Cheeseburgery Macaroni Skillet - 20 minutes, one pan, and dinner is done!

The second week of school and I am already tired of packing my sons lunch.  This is not a good sign.  He has seen my Instagram feed with all the pictures of fun and creative lunches that kids are getting.  And now, he wants that.  For the last year, he wanted the same thing in his lunch every, single, day.  This year, not only does he want to change it up (which is perfectly fine with me), he wants it to be fun and different most days.  I was at the store the other day and saw one of those divided tupperwear containers on sale, so I picked it up.  Now it is time to figure out what to put in it.  I am just not that creative early in the morning!

Creamy Tomato, Zucchini & Ricotta Pasta - a quick and easy weeknight dinner

I can not believe today is the last real day of summer break.  The summer has really just flown by.  Yesterday, I took my son to the Denver Museum of Nature & Science.  He loves exploring there, and having fun with all of the hands-on exhibits.  We have also had some of friends over to play this week.  And this afternoon we are heading to the pool for our last day of fun.  It seems like there was so much else I planned on us doing, but we just ran out of time.  One of my husband’s college roommates is going to be in town this weekend.  And one of my best friends is going to be here next week, on her move across the country.  So just because school is starting, doesn’t mean things are slowing down around here.
