My 10 year old turns 11 in just about a month.  I can’t believe that he is getting so big.  He starts middle school in the fall, and I am not sure that I am ready for that.  He is.  He brings it up all the time, he is more than ready to leave elementary school behind.  I am excited for this new adventure, but scary how fast time goes! We took advantage of him still being 10 and wanting to hang out with us, and went to Arizona for spring break.  He got to see plenty of baseball, play in the pool, and have a great time.  Hopefully that stays the same for awhile!

One thing that doesn’t seem like it will ever change is my son’s love of pasta.  Who doesn’t love pasta, right?  But this kid is obsessed.  Every time I ask him what he wants for dinner, he asks for a one pan skillet meal.  Wouldn’t it be nice if it was because he was thinking of me, and didn’t want me to put a ton of work into making dinner or doing dishes?  But no.  He just loves them! This Tomato-Basil Tortellini is no exception.  He practically will lick the plate to get all of the sauce.  We have had it over ravioli, just regular pasta with some Italian sausage mixed in or like this with tortellini.  Every way I made it was a hit.

This isn’t quite the same as other skillet meals, because I did boil the pasta separately.  But you could cook it in the sauce, and just add a little chicken broth (maybe 1 cup) to it, so the tortellini have something to cook in. I kind of love sun-dried tomatoes, so I love this tomato-basil pasta sauce.  I came up with the recipe based on this Creamy Sun-Dried Tomato Shrimp Pasta recipe, that everyone loved.  If you don’t have fresh basil, don’t worry; dried will work.  But if you can get your hands on fresh, use it.  Your family will love this tomato-basil tortellini, add it to your menu now!

Do you have those nights where the last thing you want to do is cook dinner?  But at the same time, you don’t want to just have cereal, don’t want to go out, and don’t want to just have snacks for dinner.  I hope that isn’t just me.  But there are nights I really don’t want to step foot in the kitchen, but I still want to eat real food.  Which is why I live for one pan meals. The meat, pasta, and sauce all cook together in one pan.  So easy, and clean up is fast too!

My husband would eat cereal at least 2 nights a week if I let him, but not me.  I want real food like French Onion Pork chops or a big bowl of pasta!  One pot cajun pasta is my ideal dinner for nights I don’t really want to cook.  It is a creamy pasta dish, cooked in one pan, ready in minutes, hearty, spicy, and my whole family loves it. Can’t ask for anything more on a weeknight.  I even used turkey sausage to make it just a little bit healthier. You can use your favorite kind of smoked sausage to make this cajun pasta spicy and smokey. I like to use half heavy cream and half milk to help cut down a little on the calories.  But if you want to go all out and make this even better, use all cream.

One pot cajun pasta will be happening on a regular rotation at our house.  My whole family loves spicy, so it is perfect.  You can adjust the heat level easily if your family doesn’t love heat.  Just reduce the cajun seasoning, and you will have a more mild pasta.  I served ours with the jar of cajun seasoning on the table, so my husband and I could add a little more, and my son was still able to eat his without pain! Plus the leftovers are great for lunch the next day. Anytime dinner can do double duty like that, I am happy!

What a week!  I apologize if you were trying to access this site on Monday night.  The site was down for almost 12 hours, and I was stressing out!!  Thankfully my tech person is amazingly persistent and was able to figure out the problem and get things running again.  If you notice anything that looks out of place or isn’t how it should be, let me know. I had to fix a couple things, and hope that I was able to get them all! So now that that is behind us, we can focus on the food again.  Because that is why we are here, right?!

Well the snow came.  And it came in massive amounts.  I think we got around 14 inches.  School was cancelled yesterday, so it was a day at home playing with my 10 year old. Not that we would have gone anywhere, but my husband had to take my car into work to make sure he could actually get out of the neighborhood.  So we baked cookies, he played in the snow, and definitely made some hot chocolate.  I am kind of over winter, but an impromptu day off once in awhile is nice!

Beef Stroganoff was always a favorite of mine growing up. My mom always made it with strips of steak (I have no idea what cut she used) and tons of mushrooms. This last weekend we were at my son’s Lego Robotics state competition.  I have talked about it a few times before, so if you are a regular you know they were competing at the State competition.  Well, they did awesome!!!  They placed 4th in the robot games and 1st in robot design.  They worked so hard, so it was great to see them recognized for their hard work. They got to go to school yesterday and tell all of their friends and teachers how the competition went. Everyone was so excited!

Happy Friday!!  So this is the weekend of the Lego Robotics state competition.  The boys did really well at their qualifier in November, and they are excited and ready to show off tomorrow.  They took all the feedback they received at the qualifier and expanded on their project, and added to their robot.  So we will see how things go, but the boys are pretty confident about their team and how they will do. Should be a fun and exciting day!

I was up at 4:30 am this morning to catch a flight to Chicago.  As excited as I am to get to hang out with other bloggers, meet new friends and learn a ton, I do not enjoy the early wake up call.  The good part…I didn’t have to drive to the airport.  Thankfully, Sandra from A Dash of Sanity lives near me and is going to the same conference.  So she drove!  I really don’t mind driving, but at 5:00 in the morning, there are other things I would rather do.  So I am off to a weekend of learning, and the boys in my life are home.  I have to miss my son’s first basketball game of the season, but hopefully they will do well and I can hear all about it later.

My son comes home today!!  He only left on Wednesday, so it isn’t like it was a long time or anything. But this is the first time he has been away from home and not at families house.  He has spent the weekend with his aunt and uncle, or a week at Grandma’s before.  But this was a school trip.  In Colorado they do something called Eco Week when they are in 5th grade.  They go up into the mountains to hike, camp, and learn about the outdoors for 3 days.  I can’t wait to hear all about it, I am sure they all had so much fun!!

I hope that everyone had a great weekend!  I was able to enjoy some much cooler weather, some gorgeous fall colors, and spend time with some amazing ladies.  So it was a great weekend! If you ever have the chance to visit the Colorado mountains in the fall, you need to.  The changing leaves on the Aspens are just gorgeous!  Now it is back to reality.  But it is almost like fall has arrived in Colorado….almost.  The highs are only in the 70’s this week.  After 80’s and 90’s for all of September I will take it!
