I am so ready for the weekend, but it is only Thursday.  Something about this week has just got me beat!  I have been working crazy hours, trying to get everything done, so I can take some time off when my son is home for Christmas break.  Most of the times that he has days off from school, I still have to work. I know there are lots of people out there who aren’t big bakers, so I am going to let you in on a little secret.  The trick to a great cookie….under bake it.  Seriously.  Not crazy amounts, just a minute or two.  They stay soft and chewy for much longer.  Plus if you want to microwave it for a few seconds for the fresh out of the oven taste, they are still gooey!  And in my opinion, nothing beats a gooey cookie.
