Week in Review 7/22/12

Hope you are all set for a great weekend!  I get my washer and dryer hooked up today.  There is a counter in the way, so my top loading washer won’t fit.  My husband and FIL are going to get rid of the counter top, and move in my stuff.  Then I can do laundry again!  I hate doing laundry, but after more than a week of not having access to a machine, I have LOTS to do.  Should be a very productive weekend.

Here is what I was up to this week:
Dark Chocolate Banana Peanut Butter – Erin from Spiffy Cookie guest posted for me, and made this amazing spread
Oatmeal Breakfast Cookie – My new favorite breakfast.  Tastes like a cookie, but is  a healthy breakfast in less than 5 minutes
Carnita Pizza – Quick and fun pizza.  Leftover Pork Carnitas are turned into something different for dinner.
Sun-Dried Tomato & Basil Vinaigrette – Vinaigrette using sun-dried tomatoes and fresh basil.  Great for a salad for a marinade.
Cookie Butter Swirl White Chocolate Chip Brownies – Rich and fudgy brownies with white chocolate chips and a Cookie Butter swirl.

Here are a few things I bookmarked this week:
Crispy Herb Shrimp with Chive Aioli by Tracey’s Culinary Adventures – I need more shrimp recipes!  This looks like something the whole family will love.  Crispy, lots of flavor, but still healthy.
Cookie Dough Ice Cream Pie by Cait’s Plate – This looks incredible!  Perfect for summer, and one of our all time favorite ice cream flavors – Cookie Dough!
Cannoli Cones by Pass The Sushi – Good Cannoli’s can be hard to come by.  This takes the best part and puts it front and center.  No more soggy pastry. YUM!
Raspberry Mint Mojitos by Eat Yourself Skinny – So refreshing and pretty!  I could go for one of these this weekend!
Graham Cracker Chocolate Chip Muffins by How Sweet Eats – Muffins are my favorite, this is such a fun flavor.  Can’t wait to make these with my 7 year old, he will flip!

Week in Review 7/14/12

It is moving day!!  This day could not have come soon enough.  It is about a month over due, but right now I am just thankful it is here!  The move is only a few blocks, so hopefully that will make it go smoothly.  There isn’t much that needs to be done right away, which is really nice.  The previous owners had a 2 little girls, so there is a pink room and a purple room.  Of course my 7 year old thinks his purple room needs to go immediately :)   I can’t wait until we are settled and all of our stuff is unpacked.  It has been way too long since I have had access to everything in my kitchen.

So while I move boxes in 97 degree heat, you sit back and check out what I was up to this week:
Colorado Wildfire Bake Sale:  Still a chance to donate to this great cause
Funfetti Sandwich Cookies: Made from scratch funfetti cookies with a buttercream center.
Lime-Marinated Pork Tenderloin with Chimichurri:  Pork Tenderloin marinated in lime, garlic, and olive oil.  Grilled and then topped with a chimichurri sauce.
Lemonade Pie:  Bake Sale update, and then the easiest pie you have ever made!  Only 3 ingredients to a creamy, tart, sweet, and refreshing summer pie.

Zucchini Boats by Table for Two – I love zucchini, this might actually get my family to enjoy it too!
Crispy Baked Garlic Fries by Fifteen Spatulas – I love garlic fries!  These look like the perfect crispy baked fry.
Strawberry Nutella Milkshakes by Two Peas and Their Pod – Strawberry and Nutella in one amazing drink! Perfect treat while moving!
Fudge Lover’s Brownies by You Made That – I am a sucker for a fudgy brownies, and these look incredible!
Nutella and Peanut Butter Fudge by The Shabby Creek Cottage – can you tell that I am going through a Nutella phase :)   This fudge only takes 2 minutes!!!

Week in Review 7/7/12

We have our first official non-family visitors this weekend!  We have friends from Iowa here, and are very excited to show them around.  Yesterday we drove up to the mountains, went hiking, and enjoyed the outdoors.  Tonight we get to go out for dinner, while all the kids stay home!  As soon as they leave I need to pack like crazy.  We move next weekend, and I am not quite ready.  Nothing like a little procrastination :)

Week in Review 6/2/12

It is officially summer break!  My son finished his last day of school yesterday with an End of the Year Luau Party.  They got to dress in tropical clothing and play games outside.  A pretty fun way to end 1st grade.  He lost a tooth last night too!  Big day at our house :)   Now we are are on our way to Wisconsin.  We have about 5 hours left to drive today and then we will be there!  We get to see lots of family this afternoon and celebrate my Dad’s birthday.  Which means we get cake!

Banana Yogurt Bran Muffins – Moist banana muffins with Greek yogurt and bran cereal.
Sugar Cookie Bars – Sugar cookies in bar form, with lots of frosting.
Caribbean Rice – Tropical flavors come together in a super quick side dish
Tandoori Chicken Naan Pizza – Spicy tandoori chicken on a Naan bread Pizza.
