Lots of times people think just because I have a food blog, and cook for a living, that dinner is no problem at my house. They could not be more wrong. I struggle with coming up with dinner ideas just as much as the next person. I cook during the day, so when dinner time comes I don’t always want to cook more. Same as the next person, who worked all day and just wants to go home and relax at night.

So sometimes breakfast for dinner is necessary. It is always easy and everyone loves it. Chorizo and egg breakfast wraps, and oatmeal chocolate chip pancakes are a couple of my go-tos.

Pancake Breakfast Sandwiches

These pancake breakfast sandwiches are from the new cookbook, Stack Happy, by Karly Campbell. The book is full of breakfast pancakes, healthy pancakes, savory (like BLT or loaded baked potato pancakes), and even dessert pancakes. My son is obsessed with this cookbook. Daily he is paging through it, asking me when I am going to make whatever recipe he wants in that minute. Needless to say, he was super excited when I said I was making the breakfast sandwiches for dinner!

Stack Happy

For these breakfast sandwiches you make mini pancakes (that have the syrup cooked right in) that act as the “bread” for your sandwich. You can really fill them however you want. I used sausage patties, eggs and pepper jack cheese for ours.You can do scrambled eggs (my choice) or an over-easy egg (my husband’s choice), whatever you like the best. Bacon, or even ham, would make a great substitute for the sausage. Just pick your favorite breakfast items and start building a sandwich!

And make sure you pick up Stack Happy as soon as you can. Karly’s beautiful book is a must-have addition to your cookbook library!

I have never been to Philly, but I love a good Philly Cheesesteak.  Awhile ago I shared a sloppy joe version that was pretty tasty.  But this time I am going for the real thing!  I am sure there are plenty of people from Philly out there who would disagree with me.  But for something you can make at home, this comes pretty darn close!  Plus you get to choose the quality of meat you use, so I am going to say that is even better.

Baja Chicken Sandwich

As I type this, I am sitting with my feet propped up.  We had a family football game on Thanksgiving, and it didn’t end well for me.  My brother and I got our feet tangled up, and he ended up stepping on my foot pretty bad.  We took a trip to urgent care the next morning to find out it wasn’t broken, but with orders to rest, not put weight on it, and ice it.  So I have been on crutches for a couple days.  Today was the first day I hobbled around without them!  Really not sure what this is going to mean for my running, but I am not thrilled :(

So, on to the food!  My husband was watching football, and saw a commercial for a Baja Chicken Sandwich from Quiznos, and asked if I could make that at home.  After checking out their menu, this is what I came up with.  I have no idea if it is even close, but it sure is good.  I made a chipotle mayo, and a southwestern style barbeque sauce for this sandwich.  Add chicken, bacon and cheddar cheese, and you are done.  Comes together very quickly, so it is great for a quick weeknight meal.

My husband was very happy with how this turned out.  I skipped the chipotle mayo for my 7 year old, due to the heat.  I was a little nervous about him eating it, but he loved it.  Once he saw the bacon, I am not sure he cared too much about what else was there.   I love having sandwich night for dinner, and this is great because you can customize them for everyone without extra work.  Someone doesn’t like mayo, leave it off that one.  Husband likes extra cheese, just add more.  Plus, this would be great for leftover chicken (or even turkey).

We are driving back to Colorado today.  It has been a great trip.  We were able to spend lots of time in Wisconsin with our parents.  Then we stopped in Iowa for a couple days and spent some time with friends.  I am very glad we were able to make this trip this summer.

Today I am bringing you a recipe as part of the group #SundaySupper.  I have seen it around for awhile, but got the chance to participate this week.  The goal of this group “is to Bring back Sunday Supper Around the Family Table in every home. The Family Table can be anywhere as long as the main ingredient is Love.” Isabel from Family Foodie came up with the group, and does an amazing job organizing it!  #SundaySupper is joining forces with LAND O LAKES® this week for Simple and Fresh Summer Recipes.

LAND O LAKES® has a new product out, you may have seen in in your store already.  It is  Butter with Olive Oil & Sea Salt.  It is your normal sweet cream butter with a hint of olive oil taste, and sea salt.  The sea salt helps to really enhance the flavors of your food.  This is perfect for quick weeknight meals.  You can add great flavor to your meals without a lot of extra work!

Avocados are a great summer food in my opinion.  I could eat them all year round, but in the summer they are all over the place, and pretty cheap.  Add fresh juicy tomatoes, and bacon, and you have a great grilled cheese sandwich.  Simple, fresh ingredients, and great for a quick summer meal.

A grilled cheese with bacon, avocado and tomatoes

Save Recipe


  • 2-3 strips bacon, cooked
  • 1/2 avocado, mashed
  • Salt and Pepper to taste
  • 2 slices Colby Cheese (or a sharp cheddar)
  • Sliced tomato
  • 2 slices good bread
  • 2 tsp Land O Lakes Butter with Olive Oil & Sea Salt


  1. To assemble the sandwich lay a slice of cheese on each piece of bread. Spread the mashed avocado over 1 of the slices of cheese. Sprinkle with salt and pepper to taste. Press the strips of bacon into the avocado, and top with tomatoes. Close the sandwich, and spread about a tsp of butter to the outside of each piece of bread. Cook in a pan over medium heat until toasted. Flip the sandwich, and cook until the other side is toasted and the cheese is melty!
