These truffles kind of have a long name.  But I am not sure what else to call them.  I have to highlight the good points right?  We have cookie dough.  Peppermint.  Oreo’s that happened to be double stuffed, but that seemed like too much to put in there.  Then everything is dipped in chocolate, so I deem them truffles.

Today I am posting with a group of bloggers in honor of the victims, families, and community of Newtown, CT.  “Cookies and Crafts for Sandy Hook” is one way we can unite and show support in the aftermath of what happened last week.  Newton Youth and Family Services is a licensed, non-profit, mental health clinic and youth services bureau dedicated to helping children and families achieve their highest potential. NYFS provides programs, services, activities, counseling, support groups and education throughout the Greater Newtown area.  Any donations made to them are going to those that were affected by the shooting.  If you would like to donate, you can find more information here.

Sarah posted these last week, and I knew I needed to make them immediately.  I knew that my 7 year old would love them, and they were perfect for the holidays.  What kid wouldn’t love the chance to eat cookie dough and Oreo’s together?  My 7 year old and I made these together, and then got to eat them!  He was in love.  These would be great without the peppermint extract for the rest of the year too.

I am beyond thankful for the time I have to spend with my son and my family this holiday season, and always.  In the wake of what happened in Newtown, that is even more present on my mind.  I know I am lucky to have each day with them.  I hope in some way we can honor the victims of this horrible tragedy.

Welcome to day #4 of Christmas Week, a multi-blogger event co-hosted by Kim of Cravings of a Lunatic and Jen of Juanita’s Cocina. Today’s theme for Christmas Week is “Gingerbread Surprise”.

I make truffles every year for Christmas.  I usually stick with a plain chocolate, a mint one, and then an almond flavored one.  Last year I did Cookie Dough Tuffles, and my son is already requesting that we do those again this year.  This year, I had to find a way to turn Biscoff into a truffle.  And pairing it with Gingerbread seemed like a great combination.

These are super easy to make, and you can use all store bought ingredients if you want.  Sssshhhhh, don’t tell anyone, but that is what I did.  All you have to do is find your favorite gingerbread cookie (or ginger snaps).  Biscoff Cookies would be perfect too (I might have made some that way as well).  Crush the cookies in your food processor, mix in some Biscoff spread, roll into balls, and dip in chocolate.  They are a little crunchy in the inside, and completely decadent!

I gave these to my MIL for part of her Christmas present (we celebrated when we were in WI for Thanksgiving), and also gave some to my husbands Grandma.  They got rave reviews all around.  Even my Dad who is the ultimate skeptic with anything not 100% chocolate, thought they were delicious!  So get in the kitchen, and make these for your holiday cookie tray.

I make truffles for Christmas every year.  They are a sinful treat that I love, and they always impress.  I always make a few packages to giveaway as gifts.  I usually stick with a few classics…mint, armaretto, and plain chocolate.  This year though, I am changing things up a bit!  I will still make the tried and true ones, but I am throwing a couple new ones in there.  I love cookie dough, who doesn’t?  My in laws are coming this week, and my father in law just might like cookie dough more than I do.  So I knew I just had to make these for him.

These definitely do not disappoint!  If you like cookie dough, you HAVE to make these!  They are egg free, so there are no worries about eating raw dough.  It is a good thing I put a giant portion of these in the freezer right away, because they are really hard to stay away from! This recipe is very easy.  You can follow this one, or if you have a favorite dough it is very easy to adapt.  Just omit the eggs, add in some milk for moisture, and you are ready to go!  Peanut Butter Cookie Dough Truffles anyone?  They would be amazing too!
