Indian Curry Meatballs & Giveaway

I have been kind of obsessed with Indian food lately.  I love the traditional dishes like Chicken Tikka Masala, but I also love spicing up traditional foods to make them have more Indian flavor.  Take these Curried Pretzels and Indian Spiced Nuts for example.  Simple, easy snacks that both got an Indian makeover.  Amazingly enough, my super picky 7-year-old loves Indian flavors as well.  Those nuts, are one of his favorite snacks; so I decided it was time to spice up some meatballs.

I love a really good tender meatball.  It can have barbeque sauce, marinara, or the famous glazed (with jelly) meatball.  I am not too picky, I just love a good meatball.  The opening weekend of football season my husband requested we have snacks and appetizers to watch the games with.  I made a couple of his favorite dips, but I needed something that was actually going to fill us up.  And something that my 7-year-old would eat.  Guacamole just isn’t his thing.  Enter meatballs.

I also made a spiced yogurt sauce to dip them in, and it was perfect together.  The meatballs were very tender, and super moist.  They were also full of so much flavor from the curry and garam masala.  I am having visions of making a curry sauce and serving these over rice next time…yum!  These would work great sitting in the crock pot for a party.  They are flavorful twist on the traditional.

Apricot Frozen Yogurt

I’m so happy to be a guest blogger for Erin today.  Erin never fails to deliver great recipes with universal appeal.  Each time I visit I know I will walk away either thirsty for her refreshing summer drinks, craving one of her easy-to-make main dishes or drooling over her mouthwatering cookies.  Like you, I really like that she offers a complete menu of great ideas from breakfast to dessert!

For my guest post I opted to go with a summer treat.  For me, most days this time of year do not go by without at least a taste of something cool and refreshing to beat the summer heat.  If I don’t have homemade sorbet or ice cream in the freezer, my husband and I will often find ourselves driving to our neighborhood frozen yogurt shop for dessert.  His favorite?  Tropical-flavored sorbets.  Mine?  I’m partial to a combination of cookies-n-cream and honey dew.  Once I discovered this magic pairing, I stopped considering all other flavors.  I am not a big fan of toppings but mochi pieces always find themselves in my cup.  They are the one exception.

Yielding to my current obsession with apricots, I decided to make apricot frozen yogurt.  We won’t have them much longer this season so I jumped at the chance to capture their freshness in a way I haven’t tried before.  Like most frozen yogurt recipes this one couldn’t be easier.  Your ice cream maker does all the work while you get to reap all the rewards.  Five ingredients are all you need:  fresh apricots, yogurt, sugar, lime juice and vodka.

Because I tend to go lighter on the sugar in my frozen desserts, the addition of alcohol helps to prevent icy results.  Alcohol doesn’t freeze so a tablespoon or two will help to achieve a smoother, easier-to-scoop frozen yogurt.  I used pear vodka but any vodka would work just as well.

This frozen yogurt has bold apricot flavor with a slight tang from the yogurt.  With this new recipe in my repertoire, I may not be making as many trips to my neighborhood frozen yogurt shop this summer.  I hope you’ll try it!

Strawberry Pineapple Smoothie

A few weeks ago when I posted about Cookie Dough Oatmeal, I asked you guys what was your favorite healthy breakfast.  I got a lot of people who said smoothies.  I have never been much of a smoothie drinker, so I wasn’t sure where to start.  I posed the question on Facebook and got some great ideas.  I came up with this version, and it is delicious.  I love strawberries and pineapple together, so it seemed like a great mix for my smoothie.  I couldn’t believe the price of frozen pineapple at the store, so I cut up a fresh one, put it in a freezer storage bag, and popped it in the freezer.  I will get a lot more smoothies out of my pineapple than the small bag from the store.

I am not a big yogurt person.  Over the last year and a half, I have started to eat it periodically.  But only certain brands, and certain flavors.  So Greek Yogurt scares me, and I can’t get myself to try it.  I know people love it (my husband is a fan), but I am just not there yet.  For the smoothie though, I went out on a limb and got a giant container of Vanilla Greek Yogurt.  I wanted to make sure my smoothie had lots of protein, so it would fill me up!  I thought about protein powder, but that stuff is expensive!  This is a little high in calories for breakfast, but with all the protein and fiber, I was full until lunch time.  And it was HUGE!!  You could cut the portions down a little, and still have a good sized smoothie.
