I hope you all had a wonderful start to 2012. It has been a fun week here. My son still had this week off from school, so we got to spend some time together. My parents came on Thursday, and we go to explore a little bit of Denver with them. We went to see Sports Authority Field (where the Bronco’s play), and my football obsessed 6 year old was in heaven. We have lived without a professional football team in our state for the last 5 years, so this is his first real exposure to a “home team”. Today we are celebrating Christmas with my parents, and then the holiday season officially comes to an end!
Here is what I was up to this week:
Chicken Enchilada Chili – A hearty chili, full of Mexican flavors. It just happens to be low in calories too!
Cornbread Muffins – You can’t have chili without cornbread, even if you are eating healthy. This muffins are perfect portion control.
Cabernet Braise Short Ribs with Creamy Polenta – Beef short ribs braised in wine and served over creamy polenta. Another low calorie, but impressive dinner.
Triple Chocolate Muffins – Muffins that are filled with chocolate, and they are actually healthy for you!
Flourless Chocolate Cake – My all time favorite cake to celebrate my birthday
