Week in Review 2/12/12


Yesterday we did the Holiday Blog Hop, so I am a day off with my week recap.  Hopefully you will forgive me :)

Are you ready for Valentine’s Day?  It is only a couple days away!  Do you do anything to celebrate?  We don’t usually do much.  We started a tradition, probably 8 years ago, to just do appetizers for V-Day.  Restaurants are always so busy, it was fun to go get a couple appetizers at the bar, and be done.  Now we include our son, and make them at home.  Still not sure what is on the menu this year though.  On Friday evening, our 6 year old had a birthday party, so we went out for a nice dinner.  It isn’t often we get to go out just the two of us.  Having just moved, we don’t have know of any babysitters yet, so it has been awhile.

Here is what I was up to this week:
Sour Cream Enchiladas – Secret Recipe Club is back!  Creamy enchiladas that are super quick and easy to throw together.
Corn Chowder – A thick and comforting corn chowder.  I lightened it up a little.
Peanut Butter Banana Chocolate Chip Muffins – Peanut Butter, Bananas, and Chocolate Chips in a moist and delicious little muffin
Cupcakes for Two – A vanilla cupcake recipe that makes just 2 yummy cupcakes
Bread Salad – Guest posting over at Healthy Cooking for me.  Panzanella Salad with a Balsamic Vinaigrette Dressing
Valentine Oreo’s – Homemade Oreo’s that are dressed up and ready for Valentine’s Day

Chicken Tostadas with a Cilantor Lime Cream Sauce by Taking on MagazinesI love Mexican food, and this sauce sounds delicious on these tostadas!
Peanut Butter Nutella Bars by Sweet Peas Kitchen – All my favorite things in one no bake bar!  Can NOT wait to make these!
Birthday Pancakes by Peanut Butter and Peppers – This looks like a delicious but healthier pancake recipe turned up a notch for a birthday!
100 Grand Fudge by Crazy for Crust – I love 100 grand candy bars, this fudge looks insanely good!

    We don’t do anything besides have a nice meal at home for Valentine’s Day. Hubby often works late, and coordinating with the kids gets too complicated :)

  6. Hi Erin! What a FUN tradition! Your bread salad was incredible and I can’t wait to try it! Honey Bunny and I always have a fast food lunch because of restaurant crowds and make a point of NOT exchanging gifts…..we exchange kisses instead!
