Week in Review 3/17/12


Happy St. Patrick’s Day!!  I hope you have a great day full of Irish food and Guiness Beer (avoid the green beer!)  We aren’t Irish, my husband doesn’t drink, I don’t like Guiness, and green beer scares me – so today will probably be just another day for us.  Although my 6 year old thinks the whole family needs to go to the store together, so he can see if a Leprechaun comes to mess up the house and leave chocolate gold coins behind.  Thank you Miss Sarah for that wonderful experience in preschool, that he now thinks just happens!  Too bad I haven’t been able to find chocolate gold coins, apparently I should go to the party store without him tomorrow; they would have to have something!

Here is what I was up to this week:
Meyer Lemon Tart – Individual tarts filled with Meyer Lemon Curd
Chocolate Sprinkle Cookies – Fudgy cookies rolled in festive sprinkles.  Starts from a cake mix!
Lemon-Herb Potato Salad – A light and fresh potato salad with a lemon herb dressing (only 75 calories)!
Beer Cheese Soup – A mild and delicious cheddar and ale soup
Pistachio Cream Pasta – A lightened up pistachio cream sauce over pasta

Here are a few things I bookmarked this week:
Chicken Tamale Pie by Pinch of Yum – I love Mexican food, this looks saucy and delicious.  It is supposed to cool down this week, I think I am going to make it!
Snickerdoodle Muffins by Lovin’ From the Oven – We love muffins, we love cinnamon.  My son is going to be so excited when I make these!
110 Calorie Chocolate Marshmallow Cupcakes by The Smart Cookie Cook – 110 calories?  Sign me up!  Plus it uses those new little marshmallows!
Microwave Potato Chips by Food Gal – Seriously?  Make potato chips that actually taste good in the microwave with no frying?  I am all over this!
Nutella Lava Brownies by Kirbie’s Cravings – I am obsessed with Nutella and Brownies these look over the top!

  4. You have to try the potato chips. They are not only delicious, but mind-boggling. Who knew you could make crisp potato chips in the microwave that taste better than any out of a bag. Yum!
